Gosh i didnt realise it had been so long since i posted last! Ive just been enjoying my break from university and hiding from the heat!

Its not surprising that piping buttercream in a heatwave is hard but piping florals in the heat is an actual nightmare! Its a constant rotation from fridge, to table and in 5 minutes back to the fridge again. Its also because of the heat that ive actually forgotten to take any pictures of the lovely bouquets ive done recently 🤣🤣

I dont often make larger cakes anymore but when my friend came to me about making her daughters 1st birthday cake, i couldnt say no ❤️ cannot believe how quick the year has gone. I hope she had the most amazing birthday! You are an amazing mum, she is so lucky to have you 🥰

It makes me think about my own son. It still feels like yesterday when he could fit in one arm but now he 8 and an actual giant, he will be taller than me in two years.

Cake is a lemon sponge, lemon buttercream with fresh, zesty lemon curd in the middle.

Cannot believe that level 5 is over and done with. I cant lie, this time last week i was in tears thinking i wouldnt be able to do all the work in time. But i did it

Todays exam was my final pastry exam of level 5. We had 4 hours to make an entremet frim start to finish.

Heres my black forest inspired entremet. 2 layers of kirsch syrup soaked chocolate daquoise, one morello cherry jelly layer, lots of dark chocolate mouse and topped with a dark red glaze.

We were not allowed to use actual fruit to decorate our entremet's so i was cheeky and made my own 🤪 cherries were made of chocolate mouse and a cherry coulis centre.

I have always dreamed of making things like this. I used to sit on instagram and watch chef's make these. I almost cannot believe that i made this.

Lots of wrapping up to do at uni this week.
Monday i had my final pastry class for level 5 and we made plated desserts. This little raspberry and frangipane tart tasted amaazing

Tuesday i had my final New Product Development Lecture. This is the last theory element we have before our exams 🥹

Today i have been trying to catch up on all the work i have been delaying.

Back at uni for the next two days for the final chemistry lesson of leven 5 and our final bake days for New Product Development. With some baking to fill up my evenings 🤣😅. I will be posting very little over the next two weeks as everything comes to a close, but i am always here if you need me
