This morning I sat down with Cookidoo looking for inspiration. I had a pack of mushrooms and no idea what I wanted to make. Cookidoo came up with many suggestions and I chose Thai burgers. They have a 4.8 rating so I was confident they would be good.
I had some pork mince in the freezer but not enough so I had to add a few things to bulk out the mixture. I started with 50g crushed walnuts and a few handfuls of oats the mixture was still a bit soft so I put it in the fridge for a few hours. When I cooked them they held together perfectly and I loved them. I’ll definitely make them again and I’ll add the walnuts again. We had them with salads that I made yesterday so it was a pretty easy dinner.

Last week I went to a demonstration at our Altrincham studio. Two chefs from Potyo Indian restaurant in Wilmslow cooked two curries and a chutney using the Thermomix. Butter Chicken, a Kerelan fish curry and a coriander and mint chutney. The butter chicken was described by the chefs as mild, it wasn’t. I enjoyed it but I think children might find it too spicy. Me being me I had to add a few more dishes and invite family to come and help us to eat it all. Joining the chicken was a mixed lentil dhal, steamed brown rice, naan breads, onion bhajis, tamarind butternut squash and various chutneys including my favourite tamarind chutney. ( I like tamarind). My son made some beef kebabs and two raitas, the normal cucumber one and the other had aubergine, very nice.

Last night I attended a free cooking class at Manchester Thermomix studio where two chefs from in Wilmslow were demonstrating three delicious recipes. I’ve always loved Indian cookery but I’ve picked up some tips which will hopefully lead to better dishes from me. My fish hating husband loved the fish curry,so that’s going on the menu when I get the recipe that the chefs are going to send. If you are near Wilmslow in Cheshire I recommend booking a table. I love seeing how chefs use a Thermomix.

My grandson loves Korean Fried Chicken and often asks for it if he is in town so I thought I would see how easy/difficult it would be to make it at home. It is actually very easy to recreate at home especially if you have a Thermomix. It’s even worth deep frying, something I rarely do. The sticky glaze had the perfect balance of sweet and heat making it irresistible. The recipe called for chicken wings but I didn’t have any so I used thighs, much easier to eat, I don’t really like chewing bones! This dinner was a triumph mainly because my husband said he enjoyed it. It’s a fish pie and he doesn’t really like fish. This isn’t a Cookidoo recipe but it was all prepared in the TM7 mainly using manual mode.
I chopped some garlic at speed 8 then added a sliced leek to the bowl and sautéed at 120C for 7 minutes. I put it into a bowl and without washing the bowl I made a Bechamel sauce with the addition of some grain mustard, I used the “no fail Bechamel’ which is a Cookidoo recipe. I love the thicken mode on the TM7 (it’s also on the TM6). When it was ready it too was left aside while I got on with cooking the fish and steaming some baby new potatoes. The potatoes were steamed in the basket and the fish was steamed on a plate (you could use parchment paper) on the varoma tray. The fish was cooked after 12 minutes so I took the varoma off the bowl and gave the potatoes another ten minutes. Ready for assembly.
I added some defrosted chopped spinach to the leek mixture then added the Bechamel along with the fish. In a bowl put the randomly chopped potatoes some grated cheese, spring onions a glug of olive oil and mix. This was then put over the fish mixture. Now it’s time for the air fryer to take over, or your oven. I covered the dish with foil so everything could heat through properly without getting too brown. The foil came off for about 7 minutes till the potatoes had crusty edges. Served with peas and tender stem broccoli.

Do you always follow a guided Cookidoo recipe? I love Cookidoo but I also love the manual cooking mode. Dinner today was black bean burgers, not Cookidoo served on a Scottish morning roll again not Cookidoo. On the roll is mayonnaise , a Cookidoo recipe mixed with chilli jelly made using the manual cooking mode. I served the burgers with Asian cucumber salad, Cookidoo some pickles, kimchi, quick pickled onions and of course some potato wedges. It was delicious.

The importance of vegetables and fibre in our diet can’t be overstated. I was vegetarian for about 15 years before I went back to eating some meat but in my head I’m still vegetarian. I plan my meals round vegetables not meat. Five portions of fruit and veg is supposed to be the recommended daily target but I’ve gone way above that target with these gorgeous cauliflower tacos. I started with a Cookidoo recipe but I made a few changes, instead of a cashew and chipotle sauce I made a tahini dressing with tahini, lemon and garlic (I had forgotten to soak my cashews). Instead of tortilla wraps I took some home made pittas out of the freezer, these are a staple , another staple in my fridge is quickled red onions, so good on so many things. The avocado salsa is something else we often eat. I’ve had a tin of refried beans in my pantry for a long time so today was the day to use it. I can’t say it looked very appealing but it was actually quite nice. I wouldn’t buy it again because I will make my own.
