Brisket Service

I am being asked more and more, where do I get my briskets, whats deemed a good brisket, what should a brisket cost, can I supply briskets etc etc...

Fair to say with going through 3/4 ton of meat every Saturday, we have strong buying power. We dont procure from Butchers, we procure from suppliers who supply butchers. Our supplier relationships are nothing short of superb, built upon our specific needs, long term trust, understanding and friendships. TRUST being the operative word here.

We differ from a butchers in many ways as we specialise in smoked meats as opposed to consumer butcher meats.

We supply prepared briskets for a few private co's and customers for them to smoke in their place of work or at home. We charge per kg for the entire brisket (as ya know, each brisket is different). We trim, shape and season to Tarbys SmokeHouse Cuisine styles and recipes.

Our briskets are then into the chiller or freezer (customers choice) and then collected from us. In addition, all bi-product trim is provided to the customer for their own preferences to make brisket sausages, burgers etc.

Then of course we are on hand throughout your smoke, for help, trouble shooting and advice.

Tarby Tip - BRISKET

I don't say this lightly, but I know how smoking brisket can be daunting. I know some of you guys are very apprehensive when looking to hit briskets for the first few times.

It TRULY is the hardest piece of meat to get perfect and there are a million and one variations to consider.

Brisket is by far the most asked about regarding 'How to' and 'what if's.

I cannot OVER emphasis enough, Do not overload ya self with youtube bollox. Find a pitmaster you like to follow and then 'follow his path'. Keep it simple and more importantly follow instructions because you understand the logic to do so - hope that makes sense x

As it stands, im fighting for time to put together any meaningful tutorials, but hopefully we may get additional chefs/staff to help me free up some time to concentrate and focus on specific vids for you.

We are hiring an experienced, enthusiastic Chef for our privately owned Tarbys SmokeHouse at Tarbys Farm in Nutley, East Sussex. We require a happy, skilled chef to join our smokehouse family. You will work alongside our Pitmasters to balance our traditional smoking techniques with your proven conventional chef skills.

We are open Fridays and Saturdays to our customers and this role offers working hours Thursday thru Saturday.

We are looking for a ‘can-do’ and ‘have-fun’ attitude to join our unique way of life. If you love BBQ, have a positive attitude, bring a wealth of experience no matter your age and thrive in a busy indoor/outdoor kitchen and restaurant environment, then apply today!

Thursday: 10:00 AM to 8:00 PM
Friday: 11:00 AM to 8:00 PM
Saturday: 11:00 AM to 8:00 PM

Tarby Tip!

Probably the MOST underused ingredient in cooking. Demerara sugar is a type of unrefined or partially refined cane sugar with a large grain, crunchy texture, and natural molasses flavour.

I use this in EVERY dish we create at Tarbys SmokeHouse Cuisine. It brings the 'ying to the yang'. Every seasoning, rub, sauce, marinade and even in our acidic salads.

Perfect for the BBQ, forming 'part' of a brush on marinade that you desire. Not just for its sweet addition, but to add a whole new level of texture and flavour profile.

It caramilises and gives that sticky sought after stickiness much needed in finishing off dishes. BUT REMEMBER.. it also burns fast, so use in moderation or last minute mopping.

For me, adding brown sugar is just as important as adding salt in our style of cooking x
