Brisket Service
I am being asked more and more, where do I get my briskets, whats deemed a good brisket, what should a brisket cost, can I supply briskets etc etc...
Fair to say with going through 3/4 ton of meat every Saturday, we have strong buying power. We dont procure from Butchers, we procure from suppliers who supply butchers. Our supplier relationships are nothing short of superb, built upon our specific needs, long term trust, understanding and friendships. TRUST being the operative word here.
We differ from a butchers in many ways as we specialise in smoked meats as opposed to consumer butcher meats.
We supply prepared briskets for a few private co's and customers for them to smoke in their place of work or at home. We charge per kg for the entire brisket (as ya know, each brisket is different). We trim, shape and season to Tarbys SmokeHouse Cuisine styles and recipes.
Our briskets are then into the chiller or freezer (customers choice) and then collected from us. In addition, all bi-product trim is provided to the customer for their own preferences to make brisket sausages, burgers etc.
Then of course we are on hand throughout your smoke, for help, trouble shooting and advice.
