You’re in for a treat. Tony has been making treacle bacon from our own rare breed Berkshire pigs, farmed just outside Ripon.

It has a gentle, rounded sweetness from the treacle that sits well against the richness of the pork, and it’s very good indeed.

For now it’s only available at our shop.

If you’re after a full carcass butcher, come and see us at our Boroughbridge shop. Because we work through the whole animal, the counter carries the full range of cuts. You’ll find secondary steaks such as bavette and flat iron alongside the rumps and côte de boeuf.

This week’s butcher’s highlight is dry aged Berkshire pork chops. Berkshire is a traditional breed with well marbled meat and a fuller flavour than most pork. Dry ageing deepens the flavour further and helps the fat crisp up well in the pan.

Our butchers are always happy to talk you through what’s on the counter and how to cook it.

A pork chop with crackling as good as your Sunday roast. All it takes is patience.

Start it rind down on a gentle heat and let the fat render slowly until the rind turns crisp. Then stand it on the bone, turn the heat up and brown each side. Finish with butter, garlic and rosemary, and let it rest before serving.

It takes longer than most people give a pork chop, but it’s worth every minute.
