I made Alua (a Thai dessert). The ingredients are simply all-purpose flour, sugar, and coconut milk. Nowadays, fresh milk is also popularly added. For flavor, I used jasmine extract. Alua is an ancient Thai dessert that has existed since the Ayutthaya Kingdom (Thailand's history includes three major kingdoms: Sukhothai, Ayutthaya, and Rattanakosin, or Bangkok today).
Aloo candy originated in Portugal and was first introduced to Thailand by Khun Thao Thong Kip Ma, the wife of Chao Phraya Wichayen (Constantine Phaulkon), a Greek who worked for the Portuguese court and later served in the royal court during the reign of King Narai the Great.
Originally, Alua candy was shaped like a teardrop. Nowadays, it can be made in many forms, such as various flowers. This can be achieved by piping it into flower shapes like you would for cake decorating, or by using silicone molds to press and shape it. Traditionally, it's sun-dried to make it crispy, but where I am in England, where sunlight is precious, I rarely get it. Therefore, I bake it in the oven.
The taste is crispy on the outside, soft on the inside, subtly sweet, and when you swallow it, you get the aroma of both jasmine and coconut milk simultaneously.
