Mediterranean Chicken Stew with Rice

​Note: Unfortunately, the video didn't work, but you can easily follow the recipe below!

​Ingredients
​6 chicken thighs, diced
​1 large onion, diced
​100g baby tomatoes, halved
​4 garlic cloves, minced
​2 tbsp sundried tomato paste
​2 tbsp dried basil
​300g crème fraîche
​200ml water
​A handful of fresh spinach
​Cooked rice (for serving)
​Salt and pepper to taste

​Instructions
​Brown the Chicken & Onion: In a large pan, cook the diced chicken thighs and large onion together over medium heat until the chicken is no longer pink.

​Build the Flavor: Add the halved baby tomatoes, minced garlic, sundried tomato paste, and dried basil to the pan. Cook for 2 minutes, stirring frequently.

​Simmer: Stir in the crème fraîche and water, season with salt and pepper, and bring the mixture to a boil.

​Thicken: Once boiling, turn down the heat to low and let it simmer uncovered for 20 minutes until the sauce reduces and thickens.

​Add Greens: Stir in the spinach and cook just until wilted.

​Serve: Spoon the rich stew over a bed of rice (or mix the rice directly into the stew) and enjoy!
