Marinading chicken in advance is a great way to make weeknight meals easier and more enjoyable.
Here are three ideas I came up with based on what was in my fridge.
With all of these the measurements are pretty loose, it's more about the flavours you would want than a set recipe.
The first is a Caribbean Chilli Crisp marinade, made up of:
salt
paprika
garlic powder
ground pimento (aka allspice)
Merri's Caribbean Chilli Crisp
Ginger
The second is a Korean Gochujang Chicken, made up of:
soy sauce
sesame oil
gochujang (can't be replaced for this recipe)
gochugaru flakesn (can use any chilli flakes)
mushroom powder (umami flavour booster)
The third is a Jalapeno Coriander Chicken, made up of:
greek yoghurt (tenderises the meat)
fresh coriander
lime juice
salt
jalapeno flakes (use fresh if you can get it)
