Pheasant Season Is Nearly Here

Pheasant Ballotine is by far the best way to cook pheasant breasts. These were made with a sika tenderloin centre and wrapped in streaky bacon. Individually vacuum packed and cooked in a water bath at 58 degrees C for 45 mins then finished off in a pan to crisp the bacon. Served with tender stem broccoli and fondant potatoes.
