The Lightening Bolt moment.

Where it all began...right here in my home kitchen.

After being diagnosed in 2009 with Ulcerative Colitis, a debilitating bowel disease, I needed something that I could eat without feeling terrible afterwards. Feeling left out watching everyone eat what I'd class now as 'normal' foods, I created a delicious Butternut Squash Muffin! What no-one realised was that it was actually gluten, wheat & dairy free, and made up of approximately 1/3 vegetables!

The reaction was phenomenal...Who knew sinning could be this good for you right?! Well it can... :)

I then went on to make 3 other delicious flavour combinations, all of which have been super popular in their own right ever since.
