Yesterday I made traditional Italian osso buco with beef shin (rather than veal), slow cooked in beef stock and white wine for a lighter flavour, served on saffron risotto alla Milanese and topped with a parsley, garlic and lemon gremolata. Transporting me back to our upcoming wedding venue in Lake Como where we had the best osso buco I have ever had 😋❤️

Chicken breast stuffed with nduja paste and spinach. This was sooo tasty for tea last night. Morrisons do a great deal on 3 chicken crowns for £10, not a lot of supermarkets sell chicken crowns so I was super happy to find them. So easy to stuff, simply push your fingers gently under the skin and loosen it from the breast meat, then stuff it however you like. Season the skin generously and roast for 45-50 mins, rest for 10 mins, take the breasts off the bone and serve. Super easy and cheap too

Easy tray baked salmon fillets topped with sun dried tomatoes, spinach and feta cheese.
• Make a marinade by combining 4 - 5 tbsp olive oil, 2 tsp oregano, 2 tsp paprika, 2 tsp thyme, 4 minced garlic cloves, 1/2 tsp salt.
• Halve baby potatoes and drizzle with some of the marinade and coat well. Place on a baking tray lined with baking paper and roast in a 180 C oven for 25 - 30 mins.
• Move the potatoes to the edge and add green beans and cherry tomatoes, seasoned with salt and pepper. Drizzle some of the herb oil.
• Add salmon fillets skin side down and top with the remaining herb oil, chopped sundried tomatoes, a layer of baby spinach leaves and crumbled feta cheese. Add a few lemon wedges to the tray.
• roast in the oven for a further 10-15 mins and serve with fresh, chopped parsley.

Testing scallop starter dishes this week … my family love it when they become Masterchef judges 😂 Pan fried scallops, black pudding crumb, truffle and cauliflower puree, caramelised cauliflower shards,chicken fat and truffle emulsion all topped off with a scallop coral dust to intensify the scallop flavour. Apparently I’m through to the next round and have to cook again 😂

I made confit duck leg cassoulet as a test for dinner last week and it is definitely going to be an addition to my private dine menus! The cassoulet was made the French way, slowly in the oven to form a crust on top of the delicious beans and sauce, the duck was done by the confit method under duck fat and aromatics and finished in the oven nestled in the cassoulet. Absolutely melt on the mouth, I will be posting a step by step recipe and method on how to make this later 🇫🇷
