Creamy Tuscan Chicken with Kale & Sun-Dried Tomato Sauce

Ingredients:
- 4 boneless, skinless chicken breasts
- salt and black pepper to taste
- 2 tablespoons olive oil
- 4 cloves of garlic minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 cup sun-dried tomatoes in oil drained and chopped
- 3 cups kale roughly chopped
- 2 tablespoons chopped fresh basil.

Instructions:
Step 1: Season the chicken breasts with salt and black pepper. In a skillet over medium heat, cook the chicken in olive oil until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove and set aside.
Step 2: In the same skillet, add garlic and sauté until fragrant. Pour in heavy cream and chicken broth, stirring to combine. Add Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.
Step 3: Stir in sun-dried tomatoes and kale, allowing the kale to wilt. Return the chicken breasts to the skillet, spooning sauce over them. Simmer for 2-3 minutes until heated through.
