•••🥗🍽️🌍 VOLUNTEERING 🌍☕️🍰•••

A new Friday activity for me is volunteering at the Down to Earth cafe in Wantage ❤️

It’s so rewarding to help out at this community cafe, which takes surplus food and seasonal ingredients to create the most delicious wholesome, healthy dishes.

They also have a great selection of teas, coffees and cakes - I highly recommend the blueberry and sour cream cake. Simply delicious!

I’ve been massively quiet on here for some time….life has just been super busy! 💁‍♀️

My youngest has now started school and I’m starting to adjust to having a bit more time to spare…..today I’ve finally got round to baking some bread that I’ve been meaning to try for ages.

Check out this fantastic loaf! 🤩 I really hope it tastes as good as it looks! 🤞🏼😋

🍋🍋🍋 HOMEMADE LEMONADE 🍋🍋🍋

• 3 lemons
• 100g caster sugar
• 1 litre water
• Ice

Whizzed up on full speed for TWO seconds in my Thermomix. Drain and serve with ice.

So refreshing and delicious!

My eldest now wants to have a little lemonade stall in the village. Watch this space! 👀

I do love a good chocolate brownie! Quick and easy to make and I’ve made these so many times, I don’t need to check the recipe 🙈

🥥 COCONUT & SPINACH DAHL 🥥

For dinner we tried this coconut and spinach dahl for the first time and it was absolutely delicious…..even the children demolished it (my eldest had three portions!).

It’s veggie and plant-based, which gets a big thumbs-up for us as we try to move towards a more vegetarian diet 🌱

👩🏻‍🍳🍪 LEFTOVER CEREAL COOKIES 🍪👩🏻‍🍳

Ever wondered what to do with those scraps of cereal that get left behind in the box? I hate wastage and no-one likes a bit of soggy cereal, so I pop the leftover, crumby, unwanted bits in jars, then when I have lots I make leftover cereal cookies!

So easy to make and they’re different every time, depending on what leftovers you have available!

TRADITIONAL HUMMUS

I’ve just discovered a new hummus recipe and it’s incredible! So much silkier and smoother than the last batch of hummus that I made. This is my new go-to 😋

Who knew that adding ice takes it to a whole new level?!

Here’s the recipe, which I’ve adapted from Cookidoo and blended in my Thermomix:

* 250g chickpeas (tinned)
* 50g lemon juice
* 50g tahini
* 1 clove garlic (or sq**rt of purée)
* 1/2 tsp salt
* 40g ice (approx 3 cubes)
* Drizzle extra virgin olive oil
* 1/2 tsp paprika

1. Whizz up the chickpeas, lemon juice, tahini, garlic and salt in a high speed blender until smooth.
2. Add ice and blend until smooth.
3. Serve with a drizzle of olive oil and a sprinkling of paprika.
4. Tuck in!

I demolished a bowl for lunch with pitta bread and veggies. Yum!

VEGGIE SAUSAGE ROLLS

My first attempt at making vegetarian sausage rolls. The filling consists mainly of walnuts, feta cheese and oats. These were amazing!! So delicious and a great texture. Will definitely make these again.

🎂🧜🏻‍♀️ MERMAID VICTORIA SPONGE 🧜🏻‍♀️🎂

For my daughters birthday….

Keeping it simple with a classic Victoria sponge, triple layer with jam and buttercream. Topped with buttercream and Mermaid decorations.

She’s not a fan of icing!
