VIETNAMESE INSPIRED LEMONGRASS QUORN MINCE BOWLS 🍚💥
Maybe one of my new favourite ways to eat Mince!! & I eat it a lot!! We’ve got fragrant lemongrass Quorn Mince, fluffy jasmine rice, crunchy veg, fresh herbs, a crispy fried egg and a good drizzle of chilli oil. It’s the perfect loaded rice bowl. Quorn Mince is also now available chilled and only takes 8 minutes (!!) to cook so that’s dinner sorted in no time at all 💅
Ingredients for 2:
Quorn Chilled Mince 230g
1 lemongrass stalk (remove rough outer layer)
1 garlic clove
1 shallot
1 red chilli
1 tbsp soy sauce
1 tbsp vegetarian fish sauce alternative (can sub with 1 extra tbsp soy sauce)
1 tbsp brown sugar
Juice of ½ to a whole lime
Black pepper
To serve:
Jasmine rice for two portions
Little gem lettuce cups
½ sliced cucumber
1 or 2 julienned carrots
A handful of fresh herbs e.g. coriander and mint
Fried eggs
A few sliced spring onions
Fresh chilli slices
Lime wedges
Optional sesame seeds
Optional chilli oil
Recipe:
Blitz or really finely chop the lemongrass, garlic, shallot & red chilli. Fry this aromatic base in a little oil for a few minutes until soft and fragrant. Add the Quorn Mince and cook according to pack instructions.
Whilst the Quorn Mince is cooking, season it with the soy sauce, vegetarian fish sauce / extra soy sauce, brown sugar, lime juice and a good crack of black pepper.
Continue cooking until slightly caramelised. You want it to be sort of glossy as opposed to wet! Taste and add any extra soy sauce or lime juice as needed.
Build your bowls. Start with the rice, veg and fresh herbs. Then top with the cooked Mince and a fried egg. Finish with sliced spring onions, fresh chilli slices, lime wedges, sesame seeds & a drizzle of chilli oil if using.
