This is our maritozzo.
A soft Italian bun filled with caramelised whey creme diplomat.
The dough is light, fragrant and full of vanilla, orange zest and lemon zest.
The filling starts when we make ricotta using our surplus steamed milk from coffees. From this we're left with whey. Rather than waste it, we cook it down until it caramelises, then use it to infuse a custard. This is then whipped with cream to create one of the tastiest things I’ve ever tried!
It’s sweet, creamy, slightly salty, and packed with flavour.
Soft bun. Vanilla. Citrus. Cream. Salted caramel.
Rich, but still light enough for summer.
