This is our maritozzo.

A soft Italian bun filled with caramelised whey creme diplomat.

The dough is light, fragrant and full of vanilla, orange zest and lemon zest.

The filling starts when we make ricotta using our surplus steamed milk from coffees. From this we're left with whey. Rather than waste it, we cook it down until it caramelises, then use it to infuse a custard. This is then whipped with cream to create one of the tastiest things I’ve ever tried!

It’s sweet, creamy, slightly salty, and packed with flavour.

Soft bun. Vanilla. Citrus. Cream. Salted caramel.

Rich, but still light enough for summer.

We use flour from a local farm called Lower Hampen Farm

Recently I went up to the farm to collect some flour and took the opportunity to see their population wheat as it approaches harvest and chat to Lydia about what they're doing on the farm.

It's a little longer than we'd normally put out but I found the conversation really interesting and wanted to give a bit more info on their inspiring approach to agriculture. Pt 2 to come.

This is our summer pizza.

It starts with our baguette dough, with olive oil folded through it.

Gianluca has produced the tomato sauce using garlic, basil, olive oil, good tomatoes, and just enough seasoning to let the tomatoes do the talking.

On top, Bull’s Heart tomatoes, black olives, caper berries, basil oil and grated parmesan.

It’s inspired by a classic marinara, but with a few extra touches.

Just great tomatoes, a bit of saltiness, and plenty of flavour.

Fresh, light, and made for summer.

Boxing up challenge!!

Hannah is pretty quick at boxing up customer orders. She challenged Andy (owner) to a head-to-head.

Three products. One flat takeaway box. Fastest box wins.

Cardamom bun. Croissant. Basque cheesecake.

Turns out boxing up your pastries properly under pressure is harder than it looks.

Andy is claiming the victory but is the end result good enough to take the crown? Let us know in the comments…

Strawberry, elderflower and clotted cream Danish 🍓

Cheddar strawberries are now coming through in full force and the punnets we're getting via our new produce supplier are absolutely off the chain. We've put this Danish together to show them off.

Roasted strawberries, vanilla infused clotted cream and fresh strawberries adorned with elderflowers foraged locally by one of the team. All elements are sweetened with an elderflower/honey mixture suggested by Adam

Flying off the counter, so come down and give it a try!

(We're also retailing the strawberry punnets as they're soooo good 😊)

We’ve started using hazelnuts from .

Food and Forest work directly with farmers in Europe, sourcing our hazelnuts from Fabrizio in Piedmont, Italy. The care that's put into growing this product really shines through in the quality.

They’re more expensive, but they taste better, and we actually know something about how they’re grown.

That matters to us.

It keeps the brown butter hazelnut croissant in line with the way we want to source everything at Leola.
