If you thought the flavour combinations were endless after last week's post about fresh Mexican chillies, just wait until you see them dried. In Mexico, when fresh chillies get dried they become their own thing entirely, the same way a grape becomes a raisin 🌶

Dried, they get smokier, the heat changes, and some of these are actually the base of the most traditional and iconic flavours in Mexican cuisine.

Fresh Mexican chillies don't get enough credit here in the UK. Most people can only name jalapeño and habanero, but Mexico actually has 64 varieties of chillies, each with its own unique flavour and spice level. We're only including 6 on this list to keep it short 🌶
