Hello Cheese lovers 🥰 thought the shop was looking quite nice this morning & surprise surprise it’s full of Cheese.
I just want to try & clarify something that often comes up for discussion,what constitutes a Vegetarian Cheese.So it is mainly to do with the rennet that is used by the Cheesemaker to produce their Cheese.
If they use a natural rennet,which is an enzyme from the animals stomach(Cows,Goats,Sheep)which the young need to help digest their mothers milk,then it is not suitable for vegetarians.They can use vegetarian rennet which can come from cardoons,moulds,yeasts & fungi which enables the same process of the Cheese curdling & producing the curds & whey which then goes on to form the finished Cheese.There is one other way that a Cheese may not be suitable for vegetarians & that is a lot of traditional cloth bound hard Cheeses will have a layer of lard applied to the Cheese before it is clothed & left to mature,Traditional Cheddar is a perfect example.
So check the labels or with your Cheesemonger just to make sure you are happy with how your Cheese has been made.I hope that clarifies things a little better,if not come by the shop & we can chat about it further.
