Impossible Cake/Pudding.

A crispy coconut top layer with a custard centre and a pastry bottom. So simple to make:

In a mixing bowl put -
(Pre heat oven to Gas Mark 4.5)
1 cup of sugar
1 cup of dessicated Coconut
1/2 a cup of Flour
4 Eggs
2 Cups of Milk
1/2 a teaspoon of Baking Powder
A zest of Orange (or you could use a splash of Lemon Juice or Lime Juice)
Whisk. When done, the consistency will be a thick liquid
Then pour into an oven safe dish with grease proof paper lining
Place in the oven for between 55 minutes to 1 hour and 5 minutes or when the top is crunchy ... Enjoy 😉
