BUTTER CHICKEN CURRY 🍗🧈
Okay i’m not joking this was unreal. I have wanted to make this for so long but was nervous in case I’d get it wrong. But honestly it was so simple, just takes a bit of prep and patience.
Method -
Dice your chicken breast and marinate in 0% yogurt, turmeric, cumin powder, chilli flakes, chilli powder, ginger powder, garlic powder, garam masala, curry powder, salt.
Leave in the fridge for 30 minutes or more to marinate.
In a pan, fry butter or ghee, and add 1 bay leaf (or 2 small), 1 star anise, and 1/2 teaspoon cinnamon powder (or a cinnamon stick would be better - I didn’t have any but powder is fine). When fragrant, add half a diced white onion and let it sweat down. Your kitchen will be smelling 😮💨 at this point. Add a good tablespoon of tomato purée and mix.
Add your chicken and cook until almost done.
Add a tin of chopped or diced tomatoes.
Add single or double cream (I used single), and cook until all combined and slightly reduced and thickened.
I added a good handful of chopped fresh coriander and a sprinkle more to garnish, and served with washed basmati rice
Honestly unreal I could have eaten the whole thing again, i’m happy with this one and will now be a go to.
⚠️I measured here with my heart 🤣 15g butter per person, and about a teaspoon of each seasoning. I used 70g dried rice person. This all took me up approx 780 calories person
