My take on a Greek dish of Kleftiko. Looks rustic enough for me!

Lamb slowly cooked with green pepper,tomatoes, red onion, lemon and mustard. I could only find Swede, which seems close enough to using rutabaga !

Almost the end of summer, so a great time to make Elderberry syrup (cold/flu remedy).
Elderberries are rich in antioxidants and Vitamin C and used to treat colds. Elderberry is used in many treatments including joint and muscle pain, headaches, stress, constipation and respiratory infections.

Picked from the fields locally and using local honey from Upper Rissington .

Hopefully this will help your immune system 🤗

* 400g elderberries (fresh or frozen)
* cover with water
* 2 tablespoons honey
* Any of these: 1 /2 cinnamon sticks, 1 vanilla pod, zest of lemon or lime, 8 cloves, 3 star anise, 2"piece of fresh ginger (or puree), or Turmeric root
* 2 tablespoons brandy

1. Remove green elderberries and place black berries in pan. Cover with water.
2. Bring to boil and stir. Simmer for 30 minutes. Allow to cool and mash berries with a potato masher.
3. Strain through a muslin cloth.
4. Boil again to reduce further, add honey, spices and brandy.
5. Pour into sterilised bottles.
Can be frozen
