I write to you with matcha news for the hospitality trade from Japan, where I recently visited the families who grow tea and matcha for us, for the 2026 harvest.

While in Kyoto, I visited several of the tea rooms and matcha houses to bring you the latest developments from the tea capital of Japan.

The most important observation for the hospitality trade is that the tea rooms are filled with tourists from all over the world coming to experience Japanese tea culture; and they're not ordering strawberry matcha lattes or gingerbread matchas. They're drinking usucha (the proper Japanese way of matcha in 70ml water) with a small sweet. They're buying new season leaf teas. They’re engaging authentically with Japanese tea culture and learning about how leaf tea and matcha should be drunk.

Seeing this, we need to be ready in the UK for customers that expect a higher level of authenticity when it comes to matcha and tea. This will be East Asian guests who are already knowledgeable, and also guests from all over the world who have visited Japan or seen content online and now have a higher level of knowledge and expectations. They know how it’s supposed to be done.

We will be faced with an increasingly educated customer who expects Japanese standards from the hospitality industry.

Entries are now open for Copa Jerez UK 2026, the gastronomic competition for chef and sommelier teams, who are invited to create a three-course menu paired with Sherry.

The national final will take place at Orrery by Pierre Minotti on 28th September, with the winning team earning an all-expenses-paid trip to Jerez to represent the UK at the international final in June 2027.

Douglas Blyde is delighted to be chairing the judging panel alongside Julio Sierra, Zoé Donadio, and Pierre Minotti.

Entries close at midnight on 22nd July.

The UK has a 20% rate of VAT, which is one of the highest rates for hospitality in Europe. It’s the second highest, in fact. Only Denmark is higher.

Most of our competitors have a much lower rate. In Germany, it’s as low as 7%. France, Italy and Spain have a 10% rate.

Lowering the rate of VAT for hospitality is the single most important thing the Government could do to support our local pubs, restaurants, cafes, hotels, and many more.

It would be a huge boost to the great British public, too.
