We are always looking for simple ways to make weeknight vegetable dishes more exciting, and this Malay Aubergine with a Sriracha and Lime Mayo absolutely hits the spot! 🍆

It is roasted until perfectly soft, and the kick of the Malay spices paired with the cooling, zesty lime mayo is just an incredible combination. It proves you don't need meat to make a dinner that feels like a real treat, and it is so much healthier than ordering in.

We can all completely relate to David in this clip. It’s a busy weeknight, everyone is hungry, and it is SO tempting to just crank the heat up to get dinner finished faster! ⏱️

But as Mac explains, rushing the pan is the fastest way to ruin a great meal. Cooking your meatballs on high heat, or skipping the "panade" step entirely, guarantees they will turn out dry and tough. Sometimes, turning the temperature down and taking an extra five minutes is the ultimate secret to a perfect dinner.

If you’re tired of eating the same six meals on rotation, or if you want to eat healthier but feel a "confidence gap" when you step into the kitchen, your seat at our table is ready.

What is the Spice Circle?
It’s not a polished, high-brow culinary school filled with "cheffy" egos. It’s a real, raw community built by a 30-year Professional Chef (Mac) and a home cook (David) who just wants a decent, healthier dinner.

Ever wonder what happens when a professional chef of 30 years and a home cook who just wants a decent dinner team up?

David: You’re looking at it! While Mac is perfecting the flavour profiles for our hand-blended spices, I’m currently wrestling with tripods, 4K cameras, and lighting that won’t cooperate.

To be honest? We’re still getting to grips with the filming and being on camera. We know it’s not "studio perfect" yet, but we’ve decided that launching this week is more important than waiting for the perfect edit. Why? Because we’d rather start helping you get dinner on the table now and let your feedback help us polish the rest as we go.

Mac: It’s perfect the those who want to eat better but feel that "confidence gap." My job is to bridge it. We’ve built a 12-month roadmap to help you COOK CONFIDENTLY, learn lots of new, fast healthier meals and we want our founding members to help us shape that journey from day one.

David: Exactly. Our mission is to help you ditch those takeaways, ready meals that use ultra-processed foods (UPFs) and move toward a healthier lifestyle, one simple swap at a time. No stress, no "cheffy" pretension—just real food and authentic skills.
