The best fig jam I’ve ever had, made in Thermomix 💗

So easy, and oh so good! It basically makes itself, and preserves itself too, in about an hour. Majic! 🤩

We saved ~600 euro in 3 weeks just by having our Thermomix with us on holiday. We enjoyed great food like we do at home, tried exciting new recipes, had very little deep-fried restaurant grub, and our waistlines are doing well. Win-win 💫

My tweaks: reduce the sugar by 1/4 and make half quantity or even less if only cooking for home.

Imam biyaldi (English below) 🍆 Имамбаялдъ̀ не бях правила с години, защото си е играчка. В Терми обаче стана много лесно и се получи перфектен!

Сосът от лук, домати и чесън се готви и само-разбърква в Термомикс, докато филиите патладжан се пекат във фурната. Намазваме ги със сгъстения сос и допичаме до лека карамелизация. Пресен магданоз отгоре, и според мен не му е нужно сирене. Супер вкусно, трае в хладилника - перфектното мезе за жегите, а и не само 😋

A Turkish aubergine dish best served at room temperature with fresh crusty bread. I love it but I hadn’t made it for many years because it’s not quick or easy.

Now there’s a Bulgarian recipe for Thermomix, and it’s super simple to make: the tomato-onion-garlic sauce sautés to perfection in just the right amount of olive oil, while the sliced aubergines roast in the oven.
Spread the reduced sauce over the softened aubergines and roast some more for that unique “the imam fainted from delight” taste 😋
For me Imambiyaldi is a vegan dish so I omitted the cheese.

Posting to remind myself as much as to give other people nut-free picky bits lunchbox ideas 🥪

I’m very pleased with these new lunchboxes as they are huge and we don’t have to worry about space, or arranging the ingredients in order to fit them in. Ingredients list under photos.

I’ve saved at least 4 hours of my life this season just by making Tarator, my favourite summer food, the easy way in the Thermomix.

My husband made it last time and thought it was a great recipe. There’s no compromise on flavour or texture, it works brilliantly every time, and it takes less than 10 minutes including clear-up 🙌

I look forward to many more hours NOT spent cooking 🥳

If you have a Thermomix, I recommend trying it while the weather is warm.
If you don’t have a Thermomix, get one! It’s worth it just for the Tarator 🤣
