🧀🫖 Gluten-Free Oolong Tea & Cheese Stuffed Peppers🌶️

Savoury, warming and gently aromatic
Oolong tea brings a soft, rounded savoury note to this simple baked dish — perfect for lunch, light supper or meal prep.

🛒Ingredients (serves 2–3)
Tea Infusion
2 tsp loose oolong tea (or black tea)
150ml hot water

Peppers
3 red peppers, halved and deseeded
150g cooked rice (or quinoa)
100g mature cheddar or feta, crumbled
1 small onion, finely chopped
1 clove garlic, minced
1 tbsp olive oil
2 tbsp brewed tea
Salt & pepper

Optional:
Fresh herbs (parsley or thyme)
Chilli flakes

👩‍🍳Method
Brew tea for 4–5 minutes, strain.
Preheat oven to 190°C (170°C fan).
Heat oil in a pan, cook onion and garlic until soft.
Stir in cooked rice, cheese, seasoning and 2 tbsp tea.
Fill pepper halves with mixture.
Bake uncovered for 30–35 minutes, until peppers are tender and lightly charred.
Finish with herbs or chilli if desired.

🍗Smoky Lapsang Chicken & Mushroom Pasta🍗

Creamy, comforting and packed with rich smoky flavour, this Lapsang Chicken & Mushroom Pasta is the perfect cosy dinner that can be on the table in under an hour. A small amount of brewed Lapsang Souchong tea is used to create a wonderfully smoky sauce, giving the impression of slow-cooked food without the need for a smoker or barbecue.

Combined with tender chicken, earthy mushrooms, garlic and Parmesan, the tea adds depth and warmth while allowing the other ingredients to shine. It's a comforting family meal with a unique twist.

**Serves:** 4

🛒 Ingredients

* 2 tbsp loose-leaf Lapsang Souchong tea
* 250ml freshly boiled water
* 300g penne or rigatoni
* 2 tbsp olive oil
* 2 chicken breasts, diced
* 250g chestnut mushrooms, sliced
* 1 small onion, finely diced
* 2 garlic cloves, crushed
* 150ml double cream
* 50g grated Parmesan
* 1 tsp Dijon mustard
* 1 tsp smoked paprika
* Salt and freshly ground black pepper
* Small handful fresh parsley, chopped

👨‍🍳Method

1. Brew the Lapsang Souchong tea in the freshly boiled water for 8 minutes, then strain and leave to cool slightly.

2. Cook the pasta according to the packet instructions until al dente.

3. Meanwhile, heat the olive oil in a large frying pan.

4. Fry the chicken until lightly golden.

5. Add the onion and mushrooms and cook until softened.

6. Stir in the garlic and smoked paprika.

7. Pour in **100ml of the brewed tea** and simmer for 3–4 minutes to allow the smoky flavour to infuse the chicken and mushrooms.

8. Stir in the cream, Dijon mustard and Parmesan.

9. Simmer gently until the sauce thickens.

10. Drain the pasta, reserving a splash of the cooking water.

11. Toss the pasta through the sauce, adding a little pasta water if needed.

12. Finish with chopped parsley and extra Parmesan before serving.

✨ A little Lapsang goes a long way—don't be tempted to add too much or it may overpower the dish.

✨ Add crispy pancetta for extra richness.

✨ Stir in baby spinach during the final minute of cooking.

✨ Replace the chicken with roasted butternut squash for a delicious vegetarian version.

✨ Leftovers make an excellent pasta bake the following day with extra cheese on top.

Captures the wonderful warm flavours of one of the most favourite herbal combinations, ginger, lemon and sweet cinnamon.

Tangawizi is the Swahili word for ginger, and the addition of Stevia adds a natural sweetness to balance the citrus notes of lemon.

🌱🍪 Vegan & Gluten-Free Chai Tea Chocolate Chip Cookies🍪🌱

Soft-centred, warmly spiced and naturally comforting

These plant-based, gluten-free cookies are infused with chai tea, bringing gentle spice and depth that pairs beautifully with dark chocolate. Perfect for sharing — or not.

🛒 Ingredients (makes 10–12 cookies)
Tea Infusion
2 tsp loose chai tea (or 2 teabags)
3 tbsp hot plant milk (oat or almond)

Cookies
100g smooth almond butter
80g coconut sugar or soft brown sugar
2 tbsp maple syrup
1 tsp vanilla extract
120g gluten-free oat flour
(or blitz gluten-free oats into flour)
½ tsp baking soda
Pinch of salt
80g dairy-free dark chocolate chunks
Optional:
½ tsp cinnamon or mixed spice
Flaky sea salt for topping

👩‍🍳 Method
Infuse the tea
Steep chai tea in hot plant milk for 5 minutes, strain and cool.

Mix wet ingredients
Preheat oven to 170°C (150°C fan).
Line a baking tray.
In a bowl, mix almond butter, sugar, maple syrup, vanilla and 2 tbsp cooled tea until smooth.
Add dry ingredients
Stir in oat flour, baking soda, salt and spices if using.
Fold in chocolate
Gently mix in chocolate chunks.
Shape cookies
Scoop spoonfuls onto the tray and flatten slightly (they don’t spread much).
Bake
Bake for 10–12 minutes, until edges are set but centres are soft.
Cool
Allow to cool on the tray for 10 minutes before moving.

🌿 Tea Variations
Rooibos — caffeine-free, caramel warmth
Earl Grey — floral citrus twist
Black tea — deeper, more grown-up flavour
Green tea — subtle and clean

🍪 Tips
Chill dough 20 minutes for thicker cookies
Sprinkle flaky salt before baking
Store in an airtight tin for up to 3 days
Freeze dough balls for bake-from-frozen treats

💚🍋Green Tea & Lemon Shortbread🍋💚

Delicately buttery with a bright citrus twist, these Green Tea & Lemon Shortbread biscuits are a wonderfully refreshing take on a classic bake. The earthy, grassy notes of green tea pair beautifully with the zing of fresh lemon, creating a biscuit that feels both elegant and comforting.

Green tea has long been enjoyed for its naturally occurring antioxidants, while lemon adds a burst of freshness and a lovely aroma. Perfect with an afternoon cup of tea, these biscuits are crisp, crumbly and packed with subtle flavour.

💚Green Tea & Lemon Shortbread💚

**Makes:** Approximately 18–20 biscuits

🛒Ingredients

* 225g unsalted butter, softened
* 100g caster sugar
* 300g plain flour
* 50g cornflour
* 2 tbsp loose-leaf green tea, finely ground
* Zest of 1 large unwaxed lemon
* 1 tsp fresh lemon juice
* ½ tsp vanilla extract
* Pinch of salt

✨Optional Lemon Glaze

* 100g icing sugar
* 1–2 tbsp fresh lemon juice

👩‍🍳 Method

1. Preheat your oven to **160°C fan (180°C conventional)**.

2. Line a large baking tray with baking parchment.

3. Grind the loose-leaf green tea into a fine powder using a spice grinder, pestle and mortar, or food processor.

4. In a large mixing bowl, cream together the softened butter and caster sugar until pale and fluffy.

5. Stir in the lemon zest, lemon juice and vanilla extract.

6. Add the flour, cornflour, ground green tea and salt.

7. Mix until the ingredients come together into a soft dough.

8. Turn onto a lightly floured surface and gently knead until smooth.

9. Roll out to approximately 1cm thick.

10. Cut into rounds, fingers or your chosen shapes.

11. Place onto the prepared baking tray.

12. Chill in the refrigerator for 20 minutes to help the biscuits retain their shape.

13. Bake for 18–22 minutes until the edges are just beginning to turn pale golden.

14. Leave on the tray for 5 minutes before transferring to a wire rack to cool completely.

15. If making the glaze, mix the icing sugar with enough lemon juice to create a smooth drizzle consistency. Once the biscuits are cool, drizzle lightly over the top.

🍯Honey & Rooibos Tea Loaves🍯

Makes 4 mini loaves

🛒Ingredients
350g chopped dried figs
150ml Rooibos tea (infused tea with leaves removed)
450 g honey (divided - 80g plus 100ml of infused rooibos tea)
115g unsalted butter
70g caster sugar
3 large eggs
625g self raising flour
2 teaspoons (10 g) baking powder
½ teaspoon kosher salt
150ml whole milk
150 g icing sugar, sifted
175 g sliced dried Figs

👩‍🍳Method
In a medium saucepan, heat chopped figs, (115 g) honey, and 50ml rooibos infused tea(no leaves) over medium heat until mixture begins to simmer. Remove from heat. Let stand until cool, about 30 minutes.
Preheat oven to 350°F (180°C). Butter and flour 4 (4½x2½-inch) mini loaf pans.
In the bowl of a stand mixer fitted with the paddle attachment, beat butter and caster sugar at medium speed for 5 to 10 seconds. With mixer running, slowly add remaining honey, beating until combined. Add eggs, one at a time, beating just until combined after each addition.
In a large bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually add flour mixture to butter mixture alternately with the 100ml milk and 50ml of the tea, beginning and ending with flour mixture, beating just until combined after each addition. Spoon half of batter into prepared pans; top with fig mixture. Spoon remaining batter over fig mixture.
Bake until golden brown and a wooden pick inserted in center comes out clean, about 35 minutes. Let cool in pans for 10 minutes. Run a knife around edges of loaves to loosen. Remove from pans, and let cool completely on a wire rack.
In a medium bowl, whisk together icing sugar and remaining 50ml milk until smooth. Drizzle glaze over loaves (add more milk a tiny bit at a time if not quite runny enough).
In a small bowl, place sliced figs. In a small saucepan, heat remaining 50ml tea and 2 tbs honey over medium heat until hot. Pour hot tea over sliced figs. Cover and let cool. Garnish cakes with figs, if desired. Wrap and freeze loaves for up to 2 weeks.
