Since February I’ve been working behind the scenes bringing Rack n Roll BBQ to life 🔥

This weekend is the first pop-up at the grand opening of The Knavesmire Pub, and I’ll be serving the full menu.

Really excited to finally share what I’ve been building – hope to see some of you there 🍖🤘

From a simple idea back in February to firing it up this weekend… 🔥

I’m buzzing to say that Rack n Roll BBQ is officially popping up for the very first time at the grand opening weekend of The Knavesmire Pub 🎉

Massive thanks to Tommy and Ollie for the opportunity.

I’ll be serving up the full Rack n Roll menu… big flavours, proper BBQ, and a bit of attitude 🤘🍖

A small update for anyone new to the page 👋

Swallow Catering Ltd provides a range of private chef services across York & North Yorkshire, all tailored to the event and the people hosting it.

Services include:
• Private dining & dinner parties
• Hen parties & holiday cottage catering
• Buffet catering for larger groups (up to 60 guests with suitable facilities)
• Private cooking lessons

All services are delivered with a calm, professional approach, using quality ingredients and local suppliers where possible.

This is a 28-day salt-aged, bone-in prime rib of beef, sourced from a local butcher and prepared for Christmas dinner.

• Four-bone cut
• One tomahawk taken off for a later cook
• Beef reared near Ripon, just outside York

At Swallow Catering Ltd, this is how I like to work — starting with great local produce, knowing where it comes from, and treating it with respect from butchery through to the plate.

Supporting local farmers and butchers isn’t a marketing line for me — it’s how you get better flavour, better texture, and better food overall.

This video is a long one, but if you’re interested in proper butchery, understanding your meat, or just enjoy watching food being prepared the right way, it’s worth a watch.
