A recent conversation with a customer made us realise that not everyone knows what goes into producing truly exceptional meat. Breed is only part of the story – here are four other factors that make a real difference at New Farm Beef Boxes.
🌿 Time
Our Hereford cattle and Gloucester Old Spot pigs are given the time they need to mature naturally and develop exceptional flavour. Our cattle spend as much time as seasonal conditions allow out on pasture, grazing a diverse grass ward including herbal leys. This slower, more natural approach allows flavour and fat to develop properly – because when it comes to great meat, time matters.
🐄 Low-Stress Handling
Animal welfare is at the heart of what we do. We believe calm, respectful handling is essential, from life on the farm through to processing. We use a small private abattoir where our cattle are handled calmly and efficiently, helping to minimise stress. It’s the right thing to do for the animals, and it also plays an important part in the quality of the meat.
🥩 Hanging & Ageing
We dry-age our beef for around 25–28 days, giving it time to become beautifully tender while developing a deeper, richer flavour. Good ageing is an important part of producing beef that is genuinely enjoyable to eat – and something we believe is well worth the wait.
🐷 Breed & Care
Our Gloucester Old Spot pigs are a traditional breed renowned for their excellent eating quality, with beautifully marbled, flavoursome pork. Combined with the care and attention they receive here at New Farm Beef Boxes, we believe they produce pork that is full of character and flavour.
🔪 Skilled Butchery
The final step is craftsmanship. Our butcher’s skill and attention to detail ensure every cut is prepared to the highest standard, whether it’s a beautifully marbled steak, a Sunday roast or a flavoursome pork chop. Great meat deserves great butchery.
