Crumbl Biscoff White Chip Cookies 🍪✨
These Crumbl Biscoff White Chip Cookies are soft, chewy, and bursting with cookie butter flavor packed with crushed Biscoff cookies and creamy white chocolate chips. Each bite delivers that warm, spiced sweetness you love from the original bakery version right from your own kitchen!
Ingredients:
½ cup (1 stick) unsalted butter, softened
½ cup smooth cookie butter
½ cup packed brown sugar
¼ cup granulated sugar
1 large egg
½ tsp vanilla extract
1⅓ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
3 Biscoff cookies, crushed
¾ cup white chocolate chips
5 Biscoff cookies, split in half (for topping, optional)
Method:
Prep the oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
Cream the butter mixture:
In a stand mixer or large mixing bowl, beat together the softened butter, cookie butter, brown sugar, and granulated sugar until smooth and creamy. Add the egg and vanilla extract, mixing just until combined.
Add the dry ingredients:
Mix in the flour, baking soda, baking powder, crushed Biscoff cookies, and salt. Stir until the flour is just incorporated don’t overmix.
Fold and chill:
Gently fold in the white chocolate chips. Using a large cookie scoop, portion out 10 equal cookie dough balls and place them on a plate or tray. Freeze for about 10 minutes.
Bake the cookies:
Transfer the chilled dough balls to the prepared baking sheet and bake for about 11 minutes, or until the edges are set but the centers are still soft.
Top and cool:
While warm, gently press a half Biscoff cookie into the center of each cookie. Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
