The secret to perfectly crispy spring rolls isn’t the filling..it’s your oil temperature. Here’s what every everyone who intends to fry spring rolls should know

Have you ever made spring rolls that looked golden on the outside but turned out greasy or soggy after a few minutes?

The problem often isn’t the filling—it’s the oil temperature.

For perfectly crispy spring rolls, fry them in medium-hot oil (about 170–180°C).

If the oil is too cold: The spring rolls wrappers absorb excess oil before they can crisp up, leaving your spring rolls heavy and greasy.

If the oil is too hot: The outside browns too quickly while the filling may still be cold, and the wrapper can burn before the inside is properly heated.

*TIP*
* Don’t overcrowd the pan. Fry in small batches so the oil temperature stays consistent.
* Turn the spring rolls gently for even browning on all sides.
* Once cooked, place them on a wire rack or paper towel to drain any excess oil and keep them crisp.

A perfectly fried spring roll should be golden brown, light, crunchy, and never oily.
