Artichoke, mizithra cheese & dill tart

150gr. peeled artichokes
50gr. extra virgin olive oil Ranis 150gr mizithra cheese
2 eggs
100gr full fat Greek yoghurt 60gr spring onions
savory tart dough Salt/pepper

In a pan sauté the artichokes & spring onion in extra virgin olive oil for 7-8 minutes until the artichokes soften. Pour into a bowl and add all the remaining ingredients. Season with salt and pepper.
Place the tart dough in a baking pan and fill with the artichoke mixture. Bake in a preheated oven at 180◦C for 40 minutes.

Vegan Carbonara

500gr. capellini pasta
60gr. extra virgin olive oil Castello del Barone
250gr. sliced white mushrooms
50gr. roughly chopped roasted almonds with skin
250gr. almond milk
1 t.s. corn flour

Boil the pasta in salted water and strain. Keep some of the pasta water and stir in the corn flour. In a pan, sauté the mushrooms with olive oil. Pour in the almond milk and let it simer. Add the water mixture and the pasta. Let the sauce thicken. Serve topped with almonds.

Pasta salad with chicken, zucchini, peppers &raisins.🍝

500gr. fusilli pasta
100gr. sauté chicken
2 spring onions finely chopped
1 sliced green pepper
1 zucchini sticks
100gr. greek style yoghurt
40gr. Raisins soaked in water
60gr. extra virgin olive oil Ranis

Boil the fusilli in salted water and strain. Let them cool and mix all the other ingredients. Leave in the fridge for 1 hour and serve.

Avocado, scrambled eggs & yoghurt burrito

2 eggs
40gr. heavy cream 15gr butter
80gr sauté bacon
6-7 cherry tomatoes cut in 4
1 avocado
Juice & zest of 1 lime Fresh coriander
50gr greek yoghurt Mixed green salad Tortillas
Extra virgin olive oil Ranis Salt / pepper

In a bowl, smash the avocado with a fork and add the lime juice & zest and chopped fresh coriander. In a frying pan, add the eggs and mix together with the butter over low heat. Just before the eggs are ready, add the cream to stop the boiling and prevent the eggs from overcooking. Season with salt and pepper. Spread the yogurt, cherry tomatoes, avocado, bacon, salad & eggs on a tortilla. Finish with extra virgin olive oil & wrap. Cut in half and serve.

1 large sliced onion
6 chopped spring onions
1 finely chopped leek
12 fresh artichokes cut in half
100gr chopped dill
700ml vegetable broth
80ml Castello del Barone Extra Virgin Olive Oil
2 egg yolks
Juice from 1 lemon

•In a saucepan with extra virgin olive oil, sautè the leek and onions. Add the artichokes. Add the broth and let the artichokes boil until soft. In a bowl add the lemon juice and yolks, and whisk well. Slowly add 2-3 ladlefuls from the pan, whisking constantly. Transfer the mixture from the bowl back to the pan and stir.
Add the dill and season with salt and pepper.

Sourdough bread, fluffy omelette, smoked pancetta with soy & mayonnaise with black sesame and extra virgin olive oil

Ingredients
2 slices sourdough bread
50 g butter, soft
2 medium eggs
2 pieces smoked pancetta
20 g soy sauce
40 g heavy cream 35%
40 g mayonnaise
10 g black sesame
50 g Ranis extra virgin olive oil
Salt / Pepper

Method
Spread the slices of bread with butter and toast them in a pan until they take on a golden color. In a bowl mix the eggs, cream and butter with salt and pepper. In a frying pan add Ranis extra virgin olive oil and once it is hot add the omelette mixture. In a small bowl mix mayonnaise, black sesame and a little Ranis extra virgin olive oil. Spread the bread with a little of the mayonnaise and place the fluffy omelette on top. In another frying pan place the pancetta to take color on both sides. Deglaze with soy sauce and let it glaze. Place the pancetta on top of the omelette and finish the dish with a little Ranis extra virgin olive oil in its raw form.

🥑Avocado on Toast w/ Hummus

1 slice of sourdough bread
1/2 of an avocado, sliced
100gr hummus
150gr mesclun salad
Some balsamic cream
1 sliced lime
Some black sesame
Extra virgin olive oil Ranis

•For the toast:

Grease the slice of bread with some extra virgin olive oil and grill on both sides; place on a plate. Spread a layer of hummus and put the sliced ​​avocado on top. Pour some extra virgin olive oil over the avocado to make it glossy and sprinkle with black sesame seeds. Put 2 slices of lime. For the salad, mix the mesclun with the balsamic vinegar and serve next to the avocado toast. Optionally, serve with some parmesan flakes or aged gruyere cheese.
