Making American Bacon. Something’s you can’t live without.

So…. Yes…. Moving to Greece has not been without its challenges. The house remodel is still ongoing and I will make a post on that soon. One of the bigger challenges is trying to maintain some of the staples that we had in the US. BACON!!! American bacon…. Not available in Greece/Europe. Very likely because of nitrates/nitrites. I’m not willing to give up bacon.. so I cured my own. And now I am smoking my first batch of so far it looks perfect. Pork belly is one of the most consumed proteins here. So I have it in abundance. Olive wood will be the smoke of choice (or lack therof). Olive wood smokes super clean and it is literally everywhere. They even heat homes with it.
