Classic Greek Salad with Feta, Cucumbers, Tomatoes, Red Onion, and Mixed Olives
Ingredients:
1 large cucumber, sliced
2 cups cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup Kalamata olives
1/2 cup green olives
7 oz feta cheese, cubed
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Step-by-step:
Wash and prep the cucumber, cherry tomatoes, and red onion.
Add the sliced cucumber, halved cherry tomatoes, and red onion to a large bowl or serving platter.
Scatter the Kalamata olives and green olives over the vegetables.
Place the feta cubes on top.
In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, black pepper, and parsley.
Drizzle the dressing evenly over the salad.
Toss gently if desired, or serve as is for a classic presentation.
