Σκοπός του Ινστιτούτου Κρητικής Διατροφής (Ι.Κ.ΔΙ.) είναι η έρευνα, καταγραφή, μελέτη, αξιοποίηση της γαστρονομίας, διατροφής και πολιτισμού της Κρήτης και η προβολή των προϊόντων που παράγονται σε αυτή σε όλα τα βήματα της παραγωγικής διαδικασίας.
Αποτελείται από διακεκριμένους Chef που εργάζονται ή έχουν εργαστεί στην Κρήτη, καθώς και από επιχειρήσεις, φορείς που δραστηριοποιούνται σε αυτήν. The purpose of the Culinary Institute of Crete (C.I.C) is the research, record, study, reclamation of nutrition and culture of Crete and the promotion of products which are produced in Crete at all steps of the production process. The Culinary Institute of Crete consists of distinguished Chefs who work or have worked in Crete, as well as companies and organizations active in Cretan gastronomy.
