Jean-Pierre Guyon’s wines are a true reflection of purity and precision, showcasing the incredible hard work put into their vineyards. If you haven't yet had the chance to taste one, we highly recommend the new 2023 vintage of “Mes Nuages.”
This cuvée is crafted using the innovative “en nuage” sorting technique, highlighting the meticulous process of cutting the bunch on the sorting table. The grapes, selected from various plots of Grand Cru, Premier Cru, and village appellations, come together to form a stunning wine that while not tied to a specific appellation, embodies the signature techniques of the domaine.
With the “tri en nuages” (cloud sorting) technique, whole clusters are carefully cut by hand, removing the central stems while retaining the pedicels that hold each individual grape. The result is an ethereal perfume that elevates the wine to new heights of epicurean joy.
In 2023, Jean-Pierre vinified all his wines using the “tri en nuages” (cloud sorting) technique. This commitment yields strikingly perfumed, sumptuous wines that delight with a deep scent of roses.
The élevage process involves 100% new oak from Tonnellerie Rousseau for one year, followed by an additional year in sandstone, which adds another layer of complexity and elegance.
The outcome? A delicate perfume that reaches new levels of hedonistic pleasure. The refinement of these wines is undoubtedly anchored in the exceptional destemming process.
