Champagne Franck Pascal, located in Baslieux-sous-Chatillon, owns roughly 7 hectares spread through 5 villages from the Marne Valley.
Following his national service where Franck learnt how the chemical used to produce weapons were acting on human beings, once back he realized the pesticides used in the vineyard were similar so he decided from 1998 to move towards organic farming (2005 certification) and biodynamic methods (2006 certification).
Today, his 44 plots comprised of 60% Pinot meunier, 20% Chardonnay and 20% Pinot noir and his intensive manpower work (1 person per hectare) brings him to propose atypical wines he calls « des champagnes pour la vie » (wines of Champagne for well being).

Introduced to trade customers were:

- Fluence, nv (69% PM, 31% CH) harvest 2018
- Reliance, nv (75% PM, 13% PN, 12% CH)
- Tolerance, nv (58% PM, 39% PN, 3% CH)
- Blanc de noirs Harmonie 2017 (28% PM, 72% PN)
- Quinte-Essence 2010 (22% PM, 65% PN, 13% CH)
- Coteaux champenois Confiance Red (100% PM)

On May 24th at the Grand Hyatt Hong Kong, the 20th Hong Kong OCC Grand Chapitre took place and Champagne-Asia showcased 2 cuvées from its wide wine of Champagne portfolio for the aperitif.

- Champagne A. Margaine, M, nv, 1er Cru. Comprised of 95% Chardonnay and 5% Pinot noir, this wine is produced using the solera method from juices produced from 2002 to 2014, dosed at 4/5 g/l, only 2,000 bottles are produced every year.
- Champagne Pascal Agrapart, Blanc de blancs Terroirs, nv, Grand Cru. 100% chardonnay from Avize, Oger, Cramant and Oiry, this wine is comprised of 20% 2021 harvest and 80% 2020/2019 harvests (Reserve wines 50% aged in oak casks). Aged on lie for 30 to 42 months, hand-riddled and dosed at 5 g/l

Champagne Vilmart & Cie was founded in 1890 in Rilly-La-Montagne, 1er Cru, Montagne de Reims.
The estate is following the Ampelos charter prohibiting the use of any chemical fertilizers, herbicides and pesticides. Certified HVE (high environmental value) and VDC (Viticulture Durable en Champagne).
All wines are spending 10 months in oak being large foudre barrel (52 HL) or small barrique (228 L). The wines are not going through malolactic fermentation to retain their natural acidity, which is the reason the wines are dosed between 6 & 8 g/L except Les Blanches Voies dosed at 4 g/L.

- Grande Reserve nv (70% Pinot noir, 30% Chardonnay)
- Grand Cellier nv (30% Pinot noir, 70% Chardonnay)

Champagne Claude Cazals, blanc de blancs La Chapelle du Clos 2012 Grand Cru was born from the planting of the vineyard in 1980 by Delphine and her late father, Claude, in Clos Cazals, Oger, the largest clos in Champagne. Protected by a high wall, this vineyard is looked after using organic method but is not certified. This wine, in magnum bottle, shows impressive taste quality and a spectrum of flavor heading towards secondary flavors. While enjoying it now is a great moment, the wine shows potential to be kept for another decade or so.

To celebrate a new born boy of the 21st century, an old mag from the 20th century was popped up and what an experience!
Champagne Vilmart & Cie, Coeur de Cuvée 1999 1er Cru brut was a wine blended with 80% Chardonnay and 20% Pinot noir from Rilly-la-Montagne, 60 years old vines, juices from the “heart of the cuvée” aged for 10 months in Champagne oak barrels. After spending 10 years on the lees and “dusting” for 16 years in Hong Kong, the time had come to give it a go and absolutely stunning wine with still such a potential for aging while only on the secondary flavor phase. Bravo to for such a great work in the vineyard resulting into an amazing wine.
