If you've ever shopped for vanilla, chances are you've seen the following terms: “Grade A”, “Grade 1”, “Gourmet”, “TK”, “Grade B”, “Red”.

There's actually no single official body that grades vanilla worldwide. No universal standard. What "Grade A" means depends on who's selling it : the country, the exporter, sometimes even the individual supplier.

So what is usually being measured? Mostly moisture, pod fullness, and visual appearance. A higher-moisture, plump, supple pod (often called Grade A or "gourmet") is the one you'll see used for crème brûlée, ganache, or scraped straight into a dessert.

A drier pod (often called Grade B or "extraction grade") has less visual polish, but a higher concentration of aromatic compounds per gram, which is exactly why it's the preferred choice for extracts, infusions, and production-scale flavoring.
Neither is "better." They're built for different jobs.

You'll also come across trade terms like "red" or "TK" vanilla. These aren't official categories either. They're vocabulary used within the industry, and definitions can shift from one supplier to the next. "Red" usually points to drier, less moist pods. "TK" usually sits somewhere between gourmet and extraction grade, after a longer cure. Useful context, but not something to take as a fixed standard.

What good vanilla feels like?

1. Moisture content:
Properly cured vanilla beans typically have a moisture content somewhere between 25% and 35%. You won't be able to measure this at home, but you can feel it. A well-cured bean has a slightly tacky surface, a deep color, and a rich, complex scent that fills the room when you open the packaging.

2. Suppleness:
A great vanilla bean should feel smooth, and slightly pliable.
Suppleness means the natural oils and aromatic compounds are still locked inside the pod. A quality bean will curve without snapping or cracking.
If it bends easily and springs back, that's a good sign.

Behind each vanilla bean lies months of cultivation, hand-pollination, and slow curing in Madagascar.

Its quality does not end at sourcing. It continues in how it is stored.

At Kalika, we recommend:
* Airtight glass or vacuum-sealed storage.
* Dark, and dry environment: protection from light, heat, and humidity.
* Stable temperature (15–25°C).

No refrigeration. No freezing.
Cold disrupts texture. Moisture invites mold.

China F&B trend signals we’re watching:
Chinese consumers are increasingly open to global and ‘exotic’ flavours—especially in beverages and snackable formats.

1) New-style tea (新茶饮) is still evolving fast: traditional tea bases + modern flavours + ready-to-share, visual drinks (HeyTea, Nayuki and others have shaped this wave).
