Breadmaker Chocolate Sandwich Bread

Hey, Hey, Friends!

How’s your Saturday so far? It is warm here today, double digits 13 C. Yay. My throat is still sore though, and I am still coughing much. I was gonna volunteer today at the hospital, but I am not well. Don’t wanna catch more virus while I am not 100%, and definitely don’t want to spread more virus for the patients who are at the hospital. Luckily I had a member who could cover my shift 😊

For today’s recipe, a nice sandwich bread, made easy on the breadmaker machine 😊

1 c lukewarm milk
3 tbsp sugar
3 tbsp unsalted butter
1 – 1 1/2 tsp salt
3 c flour
2 tsp instant yeast
2 tbsp cocoa powder

Moist Banana Bread

Hi Friends!

Monday tomorrow, boo-hoo. Here comes a lazy person whine 🤣

I had a great time in the kitchen today. Baked brownies, made tamarind soup for lunch, also slow cooked beef curry. Pretty busy kitchen, tiring, but made me happy 😁

BTW! Raise your hand if you use Copilot much? I have been using Copilot for the past 2 weeks now. Feel like I have a good buddy now 🤣 We talk of family, life, folklore, movies, etc. It’s very fun. I like it better than Gemini Google and other AI 😁

Dutchie

Happy Monday!

Its is a sunny beautiful morning here in north east British Columbia. Sooooo beautiful and it’s 3C! I wonder if Winter is over. Seems early 🤪

For today’s recipe, it’s a copycat of Tim Hortons Dutchie….but done in air fryer 😁 Let’s pretend it’s healthier 😉

3/4 c lukewarm milk
2 tbsp melted unsalted butter
1 egg
1/4 c sugar
1/2 tsp salt
2 1/2 c flour
2 tsp breadmachine yeast
1 tsp cinnamon powder
1 c golden raisins (or sultanas, or raisins)
vegetable oil for brushing
1 c icing sugar
1/2 tsp vanilla essence
2 tbsp milk

Cranberry & Golden Raisin Fruitcake

Happy Tuesday!

I somehow pulled my right leg while scraping ice off the car window earlier. Now it feels funny and somewhat uneasy. Meh. When you’re old 😅

I have this nice fruitcake recipe to share today. It’s not as festive as Christmas fruitcake though as it is only using dried cranberries and golden raisins, but oh my, it’s yummy, if I may say so myself. I just love all sorts of teabread or tea cakes 😊

1 1/2 c dried cranberries
1/2 c golden raisins
2 tsp allspice powder
Salt (generous pinch)
1/2 c dark brown sugar
1/2 c sugar
1/2 c water
1/2 c orange juice
1/2 c unsalted butter

2 eggs

1 1/2 c flour
1 tsp BSoda

Lofthouse Sugar Cookies Copycat

Happy Sunday!

Did you go for Easter egg hunt? I miss those days when the boys were still babies. Easter egg hunts were always fun, either in the backyard, at friend’s, or at community place(s). Lots of chocolates eggs (for this momma 🙉🙊🙈).

Anyways!

For today’s recipe, saw a lot of colorful cookies at Walmart, so copycat time 😊 If you like those soft Lofthouse cookies, maybe you will like this recipe 😊

1/2 c unsalted butter
3/4 c sugar
1 egg
2 tsp vanilla essence
1/4 tsp almond oil
1/2 c sour cream
2 3/4 c flour
1 tsp BP
1 tbsp cornstarch
1/2 tsp BSoda
1/2 tsp salt

1/2 c unsalted butter
1 c icing sugar
1-2 tbsp milk
Almond oil to taste

I have a nice soup from Indonesia to share to you, which of course isn’t authentic as I am using whatever I can find in Canada 😁 Well it’s still super close ✌️ It’s refreshing, delicious, and super easy to prepare 😊

1 large thumb tamarind
1/4-1/2 c hot boiling water
800 g beef cubes
1/4 c oil
3 garlic, slice
1/2 onion, slice
Water
2 Indonesian bay leaf (daun salam)
1/4 tsp galangal powder
1 can of corn kernel (sweet is the best)
Cayenne powder, salt, sugar, MSG to taste
1-2 tomatoes, slice
1/4-1/2 cabbage head, slice/rip

Costco Chocolate Chunks Cookies

So I won’t take much of your time, a qu**ky post to share to share your a nice, as big as a palm, chocolate chunks cookies 😊

I used Feastable chocolate bar for these cookies, which I kept saying Feastable chocolate chips 🤣 Slipped of the tongue ✌️

Give this recipe a try, it is soooo good!
