Salam, dear Caterees. This is another nutritious meal of ours: Comro. Comro was originated in western Jawa.

Comro is a short of "Oncom di jero", an Indonesian language, Sundanese language exactly, meaning "Oncom inside". "Oncom" is another form of Indonesian cultured soy beans, beside "Tempe" and "Tahu". Yes, "Tahu", not Tofu. See how Indonesians are very creative on culturing soy beans. You may find Tahu in China. But Oncom and Tempe are only in Indonesia.

We need at least 1 hour to make Comro. The shell is a mix of cassava, coconut flesh, and salt. The filling is Oncom and the Indonesian spices galore: shallot, garlic, chili, kencur/aromatic ginger, basil, chives, and celery.

Salam, dear Caterees. This is another nutritious meal of ours: Pempek. Pempek is among the top 5 of the most delicious seafoods in the world 2023 by Taste Atlas. Pempek is a savoury meal from southern Sumatera Island. At first, the name was Kelesan, which was the name of the tool used to grind fish to make this meal. The seller was an old chinese-sumateran man, who was usually called with Apek, or Pek, or Mpek, for short, in their language. Then the meal has been mentioned as Pempek.

It takes about 2 hours to make Pempek. Pempek consists of the Main/Pempek itself, Condiment, and Soup/Cuko parts. We use fish (Belida/chitala or Tengiri/mackerel fish), tapioca, garlic, egg, salt, for the Pempek. The Pempek is cooked twice. First it is boiled. Then it can be fried, roasted, grilled, or steamed. The condiments are cucumber, dried shrimp, noodle, and or chili paste. The fresh Cuko is made from palm sugar, tamarind, garlic, and chili. See, you get protein, carb, vitamin, and anti oxidant from this delicious meal.

You can have Pempek all times of the day like the Southern Sumateran people, who enjoy it as their breakfast, lunch, dinner, and snack. Or you can have it with your morning coffee and afternoon tea.

Salam, dear Caterees. This is another nutritious meal of ours: Pisang Molen. It is Indonesian language. Pisang means banana. Molen is the handy-tool used to flatten the flour dough to be the outer skin of this cake.

Indonesians heritaged this cake from Dutch who made a cake filled with Tape (in Indonesian language)/Peuyeum (in sundanese language)/cultured cassava. At first, the skin dough was just as usual dough wrapping the Tape. At around 1990s, We modified the skin with the Molen tool so that it became flat like a bandage. And we change the filling to be not only Tape, but also banana, chocolate, cheese, pineapple, and butter cream. Sometimes we mix the filling. We wrap the filling with the flatten dough, like a cocoon or mummy.

The flat skin dough is made from wheat flour, corn starch, butter/margarine, egg, vanilla, and salt. It takes minimum 30 minutes to make the skin alone. For the banana, We use either the type of pisang Raja/King banana, pisang Nangka/Jackfruit banana, pisang Kepok/Kepok banana, or pisang Tanduk/Horn banana. You get fibres, vitamins, proteins, and carbs, here in Pisang Molen. Your morning coffee and afternoon tea are not complete without Pisang Molen.

Salam, dear Caterees. This is another savoury meal of ours: Gado-gado. The look may be messy, but it is one of the healthiest and delicious foods. It is a 100%-vegetable-fibre-protein bomb.

Its origin is Kampung Tugu, a village in northern Jakarta, Indonesia. "Kampung" means village. "Tugu" is derived from the word "Portuguese". It was a settlement dedicated for Portugueses in Jakarta, on colonialism era. After Dutch won over Portuguese in some area, there were Hindis and Malays coming from the ex-Portuguese colonies to Kampung Tugu. They made farms there.

"Gado-gado" is a portuguese word meaning "A Mix". Portugueses love salad. They brought peanut spice from Mexico. They mixed the peanut spices with Indonesian vegetables. The peanut spice itself has assimilated with Indonesian spices.

We use tempe, tahu, kacang panjang/string bean, ketimun/cucumber, kangkung/water spinach, labu siam/chayote, tauge/bean sprout, kol/cabbage, kentang/potato, cabe/chili, peanut sauce (made from peanut & rich Indonesian spices), and cracker (a mix of fish/shrimp/garlic paste, cassava flour, and other spices). We make the peanut sauce while steaming the vegetables. Then we mix them. You will taste delectable savoury, spicy, and a bit sweetness flavours while inhaling the aroma of fresh vegetables, peanuts and spices. If you like a bit animal protein, we can add boiled egg or omelette. If you want some carb, we can add rice or rice cake. 1 portion of our Gado-gado as your breakfast or lunch, fulfills your energy, fibre, and protein needs.

Dear Caterees. This is our all-time-favourite-savoury snack: Dieng Potato Crisp. Our crisp is made 100% from whole-sliced Dieng Potato, not a potato dough. That is rare species of potato that is grown and harvested on Dieng Plateau, a plateau in Jawa Tengah Province of Indonesia.

Dieng Potato has colour, texture, and taste, like butter. So its nick name is butter potato. Without seasoning, it is already delicious. It is perfect for mashed potato, potato wedges, french fries, sauteed potato. But it is pretty tricky to make potato crisp out of Dieng potato, since it is softer than the common other potatoes. So you can imagine, if you succeed in making Dieng Potato crisp, the taste is heaven.

We make this crisp just as it is, without colouring and preservative, and flavour-enhancing agents. It is made fresh. The potatoes are peeled and cooked just after an order is received. We don't stock. We use new cooking oil each day. Our crisps stay crunchy and tasty up to 2 months in the vacuum package.

It can be a whole snack on its own, like the ones in the basket. It can be a companion for the main dish, like the ones in a plate of rice. We provide the original/plain type (without flavour enhancer), and flavoured types: spicy, barbeque, cheese, and roasted corn.

As a companion for a main dish, our crisp is suitable for all kinds of dishes. Rice, noodle, steak, burger, hotdog, sate/meat skewer, brothed dish or soup, chicken porridge, you name it. As a snack, beware, you can finish 4 packages or more, in 1 sitting, while you chat, watch movie, or read a book. Coffee, tea, choco, milk, herbal drink, & water, can be its best friends.

Salam, dear Caterees. This is another heritage cake of ours: Bolu Ketan Hitam. This black cake is not burnt. It is black caused by the black ingredient. Bolu is sponge/chiffon cake. Ketan Hitam is black sticky rice.

Indonesia is a producer of high-quality black sticky rice, mainly from Jawa island. It is nutritious, delicious, savoury, and fragrant. It is an export commodity. Japaneses use it to make Sake, their alcoholic beverage.

This cake is rich in Ketan Hitam, coconut oil, egg, butter/margarine, milk, and coconut milk. Vanilla enriches this cake too. It takes about 1 hour to make this fluffy cake. The cooking can be done in oven or steamer.

Salam, dear Caterees. This is another heritage cake of ours: Bolu Tape. Bolu is sponge/chiffon cake. Tape is fermented cassava, an Indonesian heritage dish, a good source of probiotic.

This cake is rich in Tape, butter/margarine, milk, coconut milk, and egg. Vanilla enriches this cake too. Sometimes we mix cheese in it or sprinkle it on top of the cake. In the previous post, we sprinkled it with dried fruits. In this post, we mix and sprinkle it with sesames. It takes about 1 hour to make this fluffy cake. The cooking can be done in oven or steamer.

You can have it anytime of the day. 1 medium tray of ours is enough for 24 slices. Have it with your morning coffee and afternoon tea. Stay energized, cheers! 🍰🧇☕️🍵

Salam, dear Caterees. This is another heritage cake of ours: Bakpia. It comes in one-bite or one-devour sizes. This cute cake comes from the province of Yogyakarta, Indonesia, since 1940. This cake has 2 skins and a filling. The 2 skins are made from wheat flour, butter/margarine, white butter/margarine, water, and oil. The outer skin is brittler than the inside skin. The filling is originally a mix of mungbean/green bean, or kidney bean/red bean, or purple yam, with coconut milk and palm sugar or refined sugar. It makes this cake a good source of vegetable protein. In a fusion mode, the filling can be milk, durian, cheese, chocolate, pineapple, choco-peanut combo, or green tea.

It takes a very attentive-diligent baker and up to 4 hours to make this cake. 1 hour alone is for soaking the bean to clean the skin and release the gas. About 1.5 hours to make the 2 skins. Then you must steam the bean, follow up with boiling it with other ingredients, to make the filling. Then you enclose the filling with the skin, one by one. Pandan leaf and, sometimes, fried shallot, enrich this cake. The cooking can be done in oven, or skillet, or steamer.

You can have it anytime of the day. This cake is a healthy diet menu. 1 tray of ours consists of 10 cute Bakpia. Stock Bakpia at your home or bring it to work. And like our other cakes, you can hardly stop after 1 bite. You alone can finish our 1 Bakpia tray in 1 sit. Stay energized, cheers! 🍰🧇☕️🍵
