Turkey Cupcakes

Turn a chocolate cupcake into a cute little turkey with simple decorations like candy corn, m&ms, and pretzels. These are so easy to make and will definitely win for cutest dessert!

INGREDIENTS
1 box chocolate cake mix, plus ingredients called for on box
1 1/3 c. (2 sticks and 5 1/3 tbsp.) butter, softened
5 1/3 c. powdered sugar
2/3 c. unsweetened cocoa powder
1 tsp. pure vanilla extract
4 tbsp. heavy cream
Pinch kosher salt
Pretzels, for decorating
Candy corn, for decorating
M&Ms, for decorating
Candy eyes, for decorating

DIRECTIONS
Preheat oven to 350º and line two 12-cup muffin tins with black cupcake liners. Prepare cupcake batter according to package directions.
Scoop cupcake batter into liners and bake until a toothpick inserted in the center comes out clean, about 22 minutes. Let cool completely.
In a large bowl using a hand mixer (or the bowl of a stand mixer using the paddle attachment), beat butter until fluffy. Add powdered sugar and cocoa powder and beat until combined, then add vanilla, heavy cream, and salt and beat until combined. (If you desire a thinner consistency, add 1 more tablespoon cream.)
Fill a pastry bag fitted with a ½” round tip with frosting. Frost cupcakes, making 1 larger frosting dollop for the body and 1 smaller one on top for the face.
Place 2 pretzels on the backside of the cupcake for the tail then arrange 4 candy corn pieces in front of them to finish the tail. Place another candy corn on the smaller dollop for the beak and 3 brown M&Ms on each side for the wings.
Finish the turkey cupcake by placing 2 candy eyes above the beak.

Samoa Brownies

They are so simple and full of chocolatey, caramel, coconut goodness, you just can't resist.

INGREDIENTS:

1 (18 ounce) brownie mix
3 1/2 cups shredded coconut (toasted)
2 (14 ounce) packages caramel candies
1/2 teaspoon salt
4 Tablespoons milk
3 ounces semi-sweet chocolate

INSTRUCTIONS:
Prepare brownie mix according to box directions and cool.
Preheat oven to 400 degrees F and place coconut on baking pan. Cook for 2-3 minutes. Stir coconut and cook for another 2-3 minutes until toasted. Watch closely so it doesn't burn.
Unwrap the caramels and in a large microwaveable bowl, add unwrapped caramels, salt, and milk and cook on high for 3 minutes, or until caramels are melted and smooth. (Stirring about every 45-60 seconds).
Add coconut to caramel and mix together. Spread over cooled brownies.
Refrigerate 4-5 hours or overnight.
Remove at least 1 hour from the fridge before cutting.
Cut into bars and drizzle with melted semi-sweet chocolate.
Let chocolate set and enjoy.

Strawberry Fluff Jell-o Salad

Light and fluffy, this Strawberry Fluff Jell-o Salad is made of simple ingredients and is so easy to make. It's the perfect light dessert or even side dish at your potluck party.

Ingredients:
1 large package Cook and Serve vanilla pudding (4.6 ounces)
1 large package strawberry jell-o (6 ounces)
3 cups water
1 16 oz Cool-Whip (lite or fat-free is fine)
1/2 bag mini marshmallows
2 cups of strawberries, chopped
2 to 3 bananas, sliced (Optional, put in before serving so they don't turn brown in the fridge)

INSTRUCTIONS:
Mix together pudding, Jell-o, and water over medium heat until it boils.
Remove from heat and pour into a large mixing bowl. Cover with plastic wrap.
Refrigerate until mixture has thickened (overnight or for about 6 hours).
The next morning or 6 hours later, beat until creamy with a hand mixer.
Fold in Cool Whip, marshmallows, and fruit. Chill about an hour before serving.
