Brady Family Brady Family Ham is a traditional 'Real Ham'. What is a 'Real Ham'? It’s all in the traditional crafting method.

To ensure the Brady Family high standards; only young Bord Bia approved fresh Irish pork legs are sourced. Next, they are slow cured in natural well water, on the bone for at least 3 days. This is what gives our hams’ their distinctive flavour. Craft butchers then trim the cured legs, and then steam cooked them slowly, rind on, for 8 to 12 hours, for a traditional real ham taste. Finally, the rind

and fat, which give the ham its flavor and succulence during cooking, is now removed and the ham is then coated by hand with breadcrumbs, or sugar glazed and dressed with pineapples and cherries. The quality of our ham is due to insisting on the best farming, curing, crafting, cooking and dressing practices. Because our hams are produced from whole pork legs, there is a natural colour and texture variation. That’s the sign of a real ham, produced with passion, to traditional methods. Water is never added to the finished ham, the ham is never tumbled, which is why you sometimes get cracks, breaks and colour variation. This shows the naturalness of the product versus the uniformity in colour and shape of some hams on the market.

Elevate the humble spud to legendary status with a hefty helping of melted cheese and generous curls of our Brady Family Made Without Nitrites Honey Roast Ham!

What You'll Need
For the baked spuds:
2 large Rooster potatoes
60g butter
4 tbsp sour cream
2 spring onions, chopped
50g cheddar cheese, grated
8 slices of Brady Family Made Without Nitrites Honey Roast Ham, cut into squares
Salt and black pepper

To serve:
A little extra sliced spring onion

How to Make It
Preheat your oven to 220°C/200°C fan (gas mark 7).

Give those potatoes a good scrub under running water and pat them dry.

Rub the spuds all over with a little olive oil, season them generously with salt and pepper, and prick them a few times with a fork. Pop them directly onto the oven rack for 50-60 minutes, turning them halfway through. You'll know they're ready when the skins are nice and crisp and the insides are wonderfully soft.

Once they've cooled down enough that you won't burn your fingers, slice them in half. Carefully scoop out the fluffy insides with a spoon, leaving about ½cm of potato on the skin so the shells hold their shape.

Turn the oven down to 180°C/160°C fan (gas mark 4).

Toss the scooped potato flesh into a big bowl and mix it up with the butter, your Brady Family Honey Roast Ham squares, sour cream, spring onions, cheddar, and a pinch of seasoning.

Spoon this glorious mixture right back into the empty potato skins and pop them onto a baking tray. Scatter a little extra grated cheddar on top for good measure.

Bake for another 15-20 minutes until they are piping hot and the cheese is beautifully melted and bubbling.

Garnish with the rest of your spring onions and dive in immediately!

The Goods (Serves 2)
2 thick slices of buttered sourdough.
4–6 slices of Brady Family Made Without Nitrites Ham
(the real Irish stuff, slow-cooked the traditional way).
2 cups baby spinach & 1 ripe avocado.
4 eggs (poached for 3 minutes for that legendary runny
yolk). Greek yogurt, lime juice, chives, and a dusting
of smoked paprika.

The Method:
Blend the avocado, lime, and yogurt until silky smooth.Sauté the spinach for 60 seconds—keep it vibrant green! Swirl your simmering water and slip the
eggs in for 3 minutes. Sourdough → Spinach → A "generous folding" of Brady Family Made Without Nitrites ham. Add your eggs, a big dollop of cream, and sprinkle the chives and paprika like you’re winning an award.

Study season is in full swing as the countdown to the leaving and junior cert is on!
Whipping up a mouth-watering pasta dish to fuel the whole family is easier than ever with our Brady Family ‘Just Add Traditional Shredded Ham’

What you’ll need:
Spaghetti (enough to feed the hungry masses)
1 pack of Brady Family ‘Just Add Traditional Shredded Ham’
A hearty handful of green peas
2 fresh eggs & a generous mountain of grated parmesan cheese
1 clove of garlic (smashed)
A sprinkle of fresh chopped parsley to make things look fancy schmancy

How to make the magic happen:
Boil: Get your spaghetti cooking in a large pot of salted water. Chuck the peas in for the last 2 minutes of the cooking time.

Sizzle: While the pasta bubbles away, gently fry the smashed garlic and your Brady Family ham in a large pan until it smells heavenly.

Whisk: Beat the eggs and parmesan cheese together in a small bowl with a good crack of black pepper.

Toss: Drain the pasta and peas (save a little mug of the starchy pasta water!) and add them straight into the pan with the ham. Take the pan completely off the heat.

Stir: Quickly pour in your egg and cheese mixture, stirring constantly. Add a splash of the saved pasta water to help melt the cheese into a silky, creamy sauce.

Serve: Twirl onto a warm plate, top with that fresh parsley, and dig in & live it up.

With this gorgeous weather, why not eat al fresco?
Try some Greek-Style Turkey flatbreads! Packed with our expertly crafted, 100% Irish At The Delicatessen Roast Turkey , it’s the perfect healthy, vibrant lunch to bring summer to your plate this May.

Save the recipe below, we promise there'll be no complaints, just crumbs!

Greek-Style Turkey Flat Breads
Makes: 2
Ingredients:
2 flatbreads
4 tbsp shop-bought tzatziki
2 tbsp olive oil
1 tomato, sliced
¼ of a cucumber
½ a red onion
Fresh parsley, oregano or dill, chopped
1 pack of Brady Family At The Deli Turkey

Method:
Preheat the oven to 180°C/160°C fan/gas mark 4.
Lightly sprinkle the flatbreads with a little water and wrap them in foil.
Bake them for 3-4 minutes to heat.
To make the Greek salad, add the tomato, cucumber, red onion, olive oil, fresh herbs, salt and pepper to a large bowl and toss together.
Set aside.
Divide the tzatziki between the two flatbreads, spreading it nicely.
Top with the salad and curls of Brady Family At The Deli Turkey.
Enjoy right away.
