The difference in shape between an oyster that’s been shaken and an oyster that hasn’t 😯

The oysters shell grows much faster than the meat inside it, which can result in a large oyster with relatively small meat content. Shaking the oysters helps to break off the fringe/ frill (edge of their shell), encouraging them to grow rounder and develop a deeper cup resulting in a more appealing shape and larger meat yield.

I am delighted to be taking over for Marie Aude in the trading sector of her company Triskell Seafood. This is a massive step for DM Seafoods, a great opportunity to grow my business and expand my customer base across Ireland and the EU. I’m so grateful to Marie Aude for the opportunity. Her devotion to her company is evident in how respected she is in the Irish industry, a name I have heard many times in the trading game. She has spent 26 years growing her company and her reputation as an oyster expert. I can only hope that I have as much success with DM Seafoods as she has had with Triskell.

I’m so looking forward to getting stuck in, and bringing the best that Ireland has to offer to Europe.

⭐⭐We are delighted to announce that Dean Murphy of DM Seafoods in Cork will be taking over the Shellfish Trading element of Triskell Seafood's activities. This is effective immediately.⭐⭐

Dean has been in the aquaculture industry for many years. Originally working on his father's mussel farm in Castletownbere, before establishing his own oyster farms and ultimately getting into shellfish trading. Dean understands firsthand the hard work that goes into growing high quality shellfish, particularly oysters. That experience means he is uniquely placed to market Irish shellfish both at home, and on the European market.
