It feels like it’s time for the Slow Cooker to get going again. I’m not feeling great and this is the simplest solution to having delicious, comforting, good for you food ready to eat later in the day.
Now the joy of cooking and specially with any type of casserole is that you can use what you want and what you have.
I’ve used the following to have a high protein, high fibre meal. Handy Husband calls it Soraya Surprise but I’ve gone with Chicken & Lentil Crock Pot Mish Mash 😅
2-3 chicken breast, chopped
2-3 spring onions, chopped
2 sweet peppers, chopped
Sweetcorn (had open tin in fridge)
Frozen Peas
Tin of lentils, drained & rinsed
3 portions Boursin Garlic & Herb Cheese
Gluten Free Orzo (70g per person)
Smoked Paprika
Mixed Herbs
Salt & Pepper
450ml Chicken Stock
Mushrooms
Piccolo Tomatoes
* Be generous with the herbs and spices!
Simply add the ingredients into your crock pot and finish with the stock making sure everything is covered.
Set on high and leave to gently cook. After 4 hours, turn the temp to medium. About an hour before serving, add chopped mushrooms and tomatoes.
Serve when you’re ready. You can lower the temp to warm if the family are eating at different times.
