Make your own Chive Flower Vinegar to use on your salad dressing.
1. Collect chive flowers at their best, fully open
2. Snip off flowers at the head
3. Add flower heads to a clean jar and press down
4. Pour over white wine vinegar
5. Seal and let sit in a cool, dark space. It will turn a beautiful pink colour.
6. After 8 to 12 days, drain the liquid into a clean jar and store in a dark place up to 3 months or in the fridge up to 8 months.

Simple Vinaigrette Recipe:
6 tbsp Olive Oil
3 tbsp Chive Flower Vinegar
1 tsp Dijon Mustard
1 tsp Honey / Maple Syrup
Salt & Pepper to taste

Mix all the ingredients except seasoning together. Season to taste. Keep up to 3 days in the fridge 🪻

*The chive stems can be used in salads or added to dinners.
*The chive heads can be thrown into a compost heap or the food waste bin.
