My bacon and cheese soda farls π₯Ήπ a traditional northern Irish classic π«
Ingredients
300g self raising flour
250ml buttermilk
100g grated white cheddar
120g Streaky smoked bacon, finely chopped
A pinch of bread soda
Extra flour for dusting
Method
Fry the bacon and let cool, finely chop and leave to the side.
Add the flour, bread soda, grated cheese and the bacon pieces to a bowl and mix together.
Then pour in the buttermilk. Use your hand, the best tool you own, to bring it together into a soft, gentle dough.
Turn the dough onto a floured surface and shape it into a circle about 1 inch thick.
Cut the circle into quarters with a sharp knife (your farls).
Dust a cast iron pan with a little flour and warm it over medium low heat. This gives the farls a gorgeous, even golden crust.
Add the farls and cook for 5 to 6 minutes on each side, or until golden and cooked through.
Make sure and seal the edges until cooked too, by placing each farl standing on each side.
Cut the farls in half and give them a light toast for best results.
Serve warm with an indulgent amount of butter, as all good things should be.
