Two of Irish products under one roof 🧀🥃 Cashel Blue met its match at the Flynns Irish Whiskey stand, the sweet, honey notes of Flynns pair beautifully with the creamy tang of the cheese. Big thanks to Jolene for having us, and if you haven’t already, her pub Paddy Flynn’s in Cloughan, Co. Offaly is an absolute must-visit.

A beautiful gathering celebrating 40 years of Ireland's extraordinary chefs, producers and local food culture.

It was a day all about connection from producer to plate, the fishermen, farmers, growers, cheesemakers, millers, distillers and artisans

Great turnnout of Irish Farmhouse Cheesemakers .tolaqueen .ie_ all good in good cheer and spirits.

Congratulations to Teresa Roche fpr winning the hard cheese awards and to Richelle and Gypsy from Leitrim Hill for winning the soft cheese awards.

Its rare to get such a scor her of a day in Ireland, we couldn't have asked for better company today.

New Cheese- Toma No. 5 🧀

Toma No. 5 is the latest edition to the Cashel Farmhouse Cheese Family.

Born from the knowledge and care of cheese-maker and creator Quentin Duboz, it is a delightfully velvety, creamy naturally rinded cow's milk cheese, definitely on the softer side. Milky in its youth it develops rounder depth of character from 10 weeks of age.

Approachable yet not shy in flavour, it bears a distinct natural g*y rind. When young this is edible, (up to 10 weeks, after this point we would suggest that you may prefer to cut off the rind -

Enjoy on a sharing board or melted as you so desire.

We will be bringing Toma No. 5 to Bloom in The Park, come taste with us and see what you think

This week we travelled to Quebec to join our importers .cooperative fine cheese division at

Every few weeks we ship from our Tipperary cheeserooms to Port Montreal via Paris.

A pleasure to meet with Canadian cheesemongera to name but a few

Loved the cheese pairing session with Dairy Farmers of Canada-great work connecting people to origin and building context. those dried banana chips and blue cheese were a super flavour party.

Lots of great moments, but one we particularly loved was rhe cheese lover who dumped her friends at the cookie stall to determinedly seek out our Cashel Blue....and the other lady who exclaimed 'oh no, oh no, oh no ...I just dont like blue cheese' -Great to engage with passion re taste!

Happy May! A little seasonal recipe which captures the seasonality of vegetables so well. With our creamy Cashel Blue acting as the perfect sprinkle, to bring it up a further notch. This is all about big flavour served with a drizzle of wild garlic pesto .

If you've never tried a Jérusalem artichoke, boy oh boy do they deliver flavour in buckets- hard to find they are an excuse to visit a green grocer. Think smokey, rich and smooth

April Times with Cashel Farmhouse Cheesemakers

The mood is good in rural Tipperary -the cows are enjoying a little sun on their backs, out on pasture and sheep's milk flows abundantly.

Our cheese team are in full swing with all 5 cheeses being crafted-Cashel Blue, Crozier Blue, Shepherd’s Store, Organic Cashel Blue and our new cheese , velvety, creamy- Toma No. 5 🧀 Now stocked in Ireland by Pop Crowley's , Mannings Food Emporium, Gubbeen farmers markets, Gannet's Pantry, On The Pigs Back among others.

Cow's milk is a little lighter now the calving season has finished and these April wheels of Cashel Blue will need more patience to mature, we look forward to enjoying them in July.

Out and about this month we enjoyed the first Dairy Connect trade conference at the amazing BIAfood innovation centre in Galway, well done to Lyn Harte for organising

Santina Kennedy's pairing of Cashel Blue and Skellig whiskey was a highlight.
