September is the perfect time to get back into a routine, and healthy habits don’t have to be complicated. These chickpea and spinach fritters are simple to make, packed with goodness and the perfect healthy snack for the whole family! 🥰

Serves 4.
Ingredients: McCormack Family Farms spinach, 2 pressed garlic cloves, 60g tahini, 2 spring onions, 500ml buttermilk, 250g self-raising flour, ¼ tsp baking powder, 3 eggs lightly beaten, 400g tin of chickpeas, a bunch of parsley, salt and pepper.

Gently sauté the spinach in a large pan over medium heat with a small drizzle of oil until wilted.
Add the garlic and cook for 1 minute until fragrant, then remove from the heat. Roughly mash the chickpeas with a fork in a large bowl, then mix in the tahini and spinach.
Add the remaining ingredients and mix to form a batter. Heat a large non-stick pan over medium heat with a drizzle of olive oil.
Once hot, add 3–4 dollops of batter, around 75ml each, and cook for 3–4 minutes on each side.
Keep the cooked fritters warm in a low oven while you cook the remaining batter. Serve with hummus or Greek yoghurt and garnish with extra chopped parsley.

Want to mix things up? Try replacing the spinach with rocket or Energise SuperMix, and experiment with different herbs and spices to make them your own ✨

This machine plays an important role in planting our snack lettuce, helping us improve efficiency and find new ways to work smarter on the farm.

It was fantastic to see so much interest in the machine throughout the day!

A big thank you to Agri Aware for having us, we really enjoyed being part of the day!
