Kinsale Gin:
Elegant amounts of juniper with notes of meadowsweet, elderﬂower and elderberry combining with aromas of lemon verbena and lemon germanium. Other interesting and unusual botanicals underscore Kinsale Gin’s complex personality. Local botanicals are gathered seasonally and sensitively, leaving enough behind for the birds and future crops. The ﬂavour of Kinsale Gin is truly of the Kinsale countryside and the development process went through many iterations before the ﬁnal harmonious aroma and taste were established. Red Earl Irish Wh***ey:
As bold as the hero who inspires it. Following the fight for freedom from the Crown at the Battle of Kinsale, 1601, seeking aid from allies in Spain, Red Hugh O Donnell, Earl of Tyrconnell, was reputedly poisoned by an Anglo-Irish double-agent & buried in Spain. Red Earl Irish Wh***ey, a tribute to his story, is first aged in bourbon, then sherry and finally matured in Rioja casks. Triple-casking delivers roundness of flavour, lengthy finish & an exceptional aroma.

How to spend a day around Kinsale's headlands.

Start at Charles Fort, the star-shaped fortress guarding the harbour, then cross to the older, quieter James Fort. Back into town for the fish market and a bite by the water, then out to the Old Head for cliffs that stop you every time. Finish in a cosy harbour snug with a Kinsale Gin and tonic as the light drops.

Kinsale, the way Colin knows it, and he knows it well.

The harbour or the Old Head? He'll take the Old Head every time. He's photographed those cliffs hundreds of times and they still stop him.

A morning sail or a walk through the town? The walk. Little cafes, the fish market, a bit of jewelry in a window, and an afternoon gone before you notice.

Culinary capital or gateway to the Wild Atlantic Way? Both, and proudly. Kinsale has carried Ireland's food and drink reputation for generations, and it's the doorway to the whole west coast.

And the history? The Battle of Kinsale, 1601. A genuine inflection point, romantic to look back on, and the reason we built a whole range around it: Red Earl and Spanish Earl.

What's in a name? If the name is Kinsale, everything.

Type it into Google and it's all there. The marina and the boats. The start of the Wild Atlantic Way. James Fort on the hill and Charles Fort across the water. The Battle of Kinsale, 1601. A food and drink town known the world over.

That's a lot for one word to carry, and it's the name we put on every bottle.

Why Kinsale? Just look at the place.

The start of the Wild Atlantic Way. Great pubs, restaurants, hotels. Fabulous scenery, deep history, and of course great wh***ey and great gin.

Our founder, Tom O'Riordan, a longtime resident and publican, saw the marketing proposition in the name itself, especially tied to gin. That's where Kinsale Gin came from. We thought it was a strong idea for a brand.

Where it all began: a name.

Tom O'Riordan, founder and longtime Kinsale publican, saw what the word Kinsale could carry. And it carries a lot. Type it into Google and up comes the marina, the scenery, the historic forts: James Fort on the hill behind us, Charles Fort across the water. The Battle of Kinsale.

There's so much already living inside that one word. Tom saw a brand in it. We've spent every year since trying to live up to it.

The right glass matters.

Colin takes his wh***ey from a crystal tumbler, a habit passed down from his mother, who was particular about glassware even for a G&T at home.

Tonight it's the Red Earl Irish Wh***ey, 8 years in the cask, poured neat. A small ritual that turns an ordinary evening into something worth slowing down for.

The maker, on the small stuff that matters.

Gin or wh***ey? Neat with a twist or a classic G&T? Red Earl or Spanish Earl? Foraged botanicals or exotic imports? Soft and mellow, or bold and peaty?

Colin's been a wh***ey man since the heavy metal days, ""back when I had hair."" Red Earl's his go to: the first wh***ey we launched, nine years old, matured like a first child. Botanicals foraged right here, because Kinsale Gin should be from and of Kinsale, not just named after it. Soft and mellow every time, no bite, no burn. And yes, the glass matters. He gets that from his mother.

Last question: trust the science, or trust the palate? Obviously the palate. It doesn't matter where a botanical came from if it tastes horrible.
