Cottage Cheese Toast 🥑🌶️

Avocado + cottage cheese + hot honey = feel good fuel

Preparation Time - 5 minutes
Cooking Time - 5 minutes
Servings - 1 - 2

Ingredients

2 thick cut slices of sourdough, lightly toasted
1 large ripe avocado, mashed
1 spring onion finely chopped or red onion if you prefer
1 tbsp fresh parsley, finely chopped
Juice of half a lime
3 heaped tbsp cottage cheese
2 - 4 tsp Mileeven hot honey

Directions

Mash the avocado with the spring onion, parsley, and lime juice. Season to taste with salt and pepper.
Add the avocado to the lightly toasted sourdough.
Top each piece with cottage cheese.
Drizzle with 1 - 2 tsp of the hot honey per slice and serve immediately.
Add some extra chilli flakes if desired; completely optional!

Get to know us...

Mileeven was established in 1988 by Eilis Gough as Joe, her husband, kept bees as a hobby.

Starting with two hives in the back garden of their house, everything seemed normal with this hobby! Fast forward a few years and a move to Piltown, Co Kilkenny where space was not an issue and Joe's love for bees and Irish honey at a questionable level and the two hive hobby turned into a 100 hive job and Mileeven was born.

"Mil" is the Irish for honey and "Aoibhinn" (pronounced "eeven") means delightful!

Delightful honey it was and still is, and so a small business, starting with just Pure Irish Honey, run from the kitchen grew to where we are today.

Mileeven is run now by Eilis and Sarah, her daughter, still in Co Kilkenny. As the business grew, so did the range of honeys and now includes honeys from other countries such as Orange Blossom honey from Spain, Organic honey from Mexico / Bulgaria (depending on the season), Eucalyptus Honey Uruguay, Pure honey from Spain amongst others but staying true to the quality that is good for the bees and great for taste.

All of our honeys are pure, raw & unblended.

The recognition from the Great Taste Awards, Irish Food Awards and Gulfood Awards that we have received over the years for our honey as well as BRC AA* and Organic Trust Certification confirm our quality and innovation and our position as a leading honey supplier in Ireland and around the world.

Lets talk about Irish Honey 🍯

- Bees only fly and make honey when the sun shines and so Ireland isn't always able to produce enough honey to meet the demand all year around.

- As a very rough estimate, Ireland can produce enough honey for about 10-20% of the market depending on how the weather has been that year. This is totally weather dependent and out of everyone's control, unfortunately.

- Irish honey is generally harvested in late summer and so this is the best time to stock up as if the summer was not great, it will sell out quickly!

- The window for bees to produce honey in Ireland is relatively short, again depending on weather is only about 8 weeks out of the whole year.

- To make honey, bees need the right kind of flowers / blossom, open and blooming at the right time of year in the right weather.....there are a lot of boxes to tick.

- To show how hard it is to make honey, to make 454g (1lb) of honey bees need to fly 55,000 miles and visit 2 million flowers. That's a lot of work for one jar!

- Is all of Mileeven's honey Irish?
We have a Pure Irish Honey from around the South East area. We do not blend any of our Irish honey and it is clearly labelled "Pure Irish Honey".

- Our other honeys are sourced from other countries to provide a variation in offering, price and flavour. We have lovely honeys like Lavender Honey , Orange Blossom Honey, Organic Honey, Eucalyptus Honey to name a few.

- We use only the best quality honeys and have been working with our suppliers for years. All our honeys are pure, real honeys with nothing else added, regardless of the country it comes from.

- 2025 was not a great year for Irish Honey, as although the middle of the summer had good weather unfortunately the Spring / early Summer was too cold and wet for the bees / flowers. 2024 was a great year and fingers crossed 2026 will be the same 🤞

Let’s talk about organic honey 🍯

We have been getting loads of great questions about organic honey recently so here’s all you need to know!

- Ireland does not produce any certified organic honey, as we do not have vast enough areas of suitable organic land that is right for bees / honey to meet the strict criteria, unfortunately.

- Our organic honey is imported from select countries.

- Our organic honey is single origin, raw & unblended. It is not an EU/Non-EU blend.

- For honey to be certified organic, there are strict regulations surrounding the land that the bees forage from, as of course we can’t control the bees so we control the land.

- There are also strict regulations regarding the bee keeping practices for the honey to be certified organic.

- Methodical testing is carried out on the honey to ensure that it is what it should be.

- Typical producers of organic honey are Brazil, Mexico, Bulgaria, Italy and China amongst others as they have significant land mass to produce organic honey. (However we do not use Chinese organic honey).

- The Organic Trust requires the logo and licence number to appear on the label along with the correct declaration of either “EU Agriculture” or “Non-EU Agriculture” despite the product being from a specific country.

We fully understand that when you are not in the industry everyday it can be confusing and frustrating and so we are going to post some more information over the next few days to help people gain a better understanding of honey as we are proud of what we do and are happy to share!

Oats, berries, honey. Breakfast done right!

The perfect breakfast to warm up on these cold mornings ❄️

Ingredients
100g porridge oats
300ml milk
2 tbsp plain Greek yoghurt
2 tbsp Sarah’s Fruity Acacia Honey with Mixed Berries 🍯


Garnish
Sarah’s Fruity Acacia Honey with Mixed Berries

Method
Add the oats to a pot, pour in the milk, mix and bring to a boil. Simmer for about 5 minutes giving it a stir from time to time to ensure it does not stick to the bottom of the pot and burn.
Remove from the heat and allow to cool for 1 minute. Stir in the Greek yoghurt and honey with berries. Serve immediately.


Tips
Toppings are endless when it comes to oats! You can add in any of your favourite nuts, seeds, fruits. 🫐🍓Why not try it topped with Greek yoghurt and any of the Sarah’s honey range for a different flavour every day of the week!
