Le Fermentainu was established early in 2014 by fermentationist Mendel Domnitz in an endeavour to bring the finest fermented foods and beverages to the Israeli food market. Mendel, a certified Nutritional Therapist (The Nutritional Healing Foundation UK), began fermenting foods after learning about the health benefits of eating them as part of a healthy daily diet. y nutritionally dense foods as a means to incorporate them into his daily diet and enjoy their many health benefits. Fast forward eight years and Mendel had gained considerable experience in fermentation and had developed the art of making a good ferment. After sharing some samples of his produce with friends, it was suggested that he start selling his produce and so with the help of a few friends Le Fermentainu was born. Mendel's passion and expertise for healthy nutrition and good health in general, coupled with his love for living a natural and sustainable lifestyle, are the fundamental principles on which he has built his company. We strive to offer high quality, nutrient dense, artisan products. In making our products we use only the highest quality, organic and natural produce. Our products are all produced in the traditional manner that has been used for generations, without the use of vinegar, preservatives or other additives. Our lacto-fermented products are naturally fermented with the use of Celtic sea salt and nothing else but love and time. This is a process of time and patience as Mendel patiently cares for his creations while the lactic acid producing bacteria slowly break down the vegetables. During this process the nutrients in the vegetables are multiplied and other nutrients that were not present before are produced. The final product is chuck full of beneficial bacteria, enzymes, vitamins & minerals that will promote good digestion and a healthy gut – leading to an improvement in general health. The use of sugar is reserved only for our fermented beverages and we use organic evaporated cane sugar. Sugar is a crucial nutrient for the bacteria that are growing and need this nutrition to survive - without the sugar they would die. During the process of fermentation, the symbiotic culture of bacteria and yeast consume the sugar and in the process produce all these wonderful strains of beneficial bacteria, which then end up in the product. If the product has been adequately and properly fermented then the final product will only contain a small amount of the original sugar as most of it will have been consumed by the bacteria and yeast – which is why the end product is not very sweet. All water used in our products has been filtered to remove contaminants and chemicals like chlorine, VOC's and fluoride. The water has also been energised using Grander technology. We work in cooperation with a local organic family run farm to source all our very fresh vegetables and herbs for our products. Often they have been picked the very morning that we take delivery, and this enables us to use super fresh produce still full of nutrients. It is our intention to make these healthy power houses of nutrition easily accessible to you at a fair and affordable price. We believe in wholesome, nutrient dense foods that nourish the body, mind and soul. We embrace and promote the philosophy of Slow Food. We appreciate that food which will nourish the body, not only in a physical sense but including the brain and emotions, will need time and loving attention in its creation. This idea challenges the present “faster is better” culture that is causing havoc to our lives in every area. We are sensitive to the environment and plight of Mother Earth. We compost and recycle all our waste and minimize our use of natural resources in the making of our products. We are very happy that customers return their bottles and jars to be reused or bring their own to be filled. We value Fair Trade and endeavour to insure that all involved in our company get a fair price for products or services rendered. The produce is made in a Kosher kitchen, with all utensils being used exclusively for the production of our products. We are certified Kosher parve by KCAN Kosher UK. They certify food products from small food producers under the premise that any customer can inspect the kitchen we use at any time they wish. Essentially this makes you, the customer, the Kashrut supervisor. The KCAN kashrut certification is given to companies that adhere to these strict principles:
