Tumkur-Style Mutton Pulav
A comforting Sunday breakfast that’s somewhere between a pulav and a khichdi, with a unique fried gram spice mix that gives it its signature texture.
Ingredients
* 1 kg mutton shoulder, cut into medium-sized pieces
* 2 cups rice (Bullet Rice, Sona Masoori or Seeraga Samba), washed and soaked for 20 minutes
* 3 onions, thinly sliced
* 2 ripe tomatoes, chopped
* 1½ cups mint leaves, roughly chopped
* 5–6 green chillies, slit
* 1 tbsp ginger-garlic paste
* 1 tsp turmeric powder
* 3 tsp chilli powder (adjust to taste)
* Salt to taste
* 1 cup oil
For the Fried Gram Spice Powder
* 2 handfuls fried gram (roasted gram / putani)
* 8–10 cloves
* 1 cinnamon stick
Method
Step 1: Cook the Mutton
In a pressure cooker, add the cleaned mutton along with:
* 1 tsp salt
* 1 tsp chilli powder
* 1 tsp turmeric powder
Sear the mutton on high heat for a few minutes.
Close the cooker and pressure cook for 8–10 whistles, or until the mutton is about 80% cooked. The number of whistles may vary depending on the quality and age of the meat.
Do not discard the broth released by the mutton.
