Tumkur-Style Mutton Pulav

A comforting Sunday breakfast that’s somewhere between a pulav and a khichdi, with a unique fried gram spice mix that gives it its signature texture.

Ingredients

* 1 kg mutton shoulder, cut into medium-sized pieces
* 2 cups rice (Bullet Rice, Sona Masoori or Seeraga Samba), washed and soaked for 20 minutes
* 3 onions, thinly sliced
* 2 ripe tomatoes, chopped
* 1½ cups mint leaves, roughly chopped
* 5–6 green chillies, slit
* 1 tbsp ginger-garlic paste
* 1 tsp turmeric powder
* 3 tsp chilli powder (adjust to taste)
* Salt to taste
* 1 cup oil

For the Fried Gram Spice Powder

* 2 handfuls fried gram (roasted gram / putani)
* 8–10 cloves
* 1 cinnamon stick

Method

Step 1: Cook the Mutton

In a pressure cooker, add the cleaned mutton along with:

* 1 tsp salt
* 1 tsp chilli powder
* 1 tsp turmeric powder

Sear the mutton on high heat for a few minutes.

Close the cooker and pressure cook for 8–10 whistles, or until the mutton is about 80% cooked. The number of whistles may vary depending on the quality and age of the meat.

Do not discard the broth released by the mutton.

Everyone talks about ghee roast, neer dosa and mangalore buns.

But some of Coastal Karnataka’s most-loved dishes rarely get the same attention.

Many of these were staples at home, served during festivals, monsoons, family gatherings and lazy Sunday lunches. Yet they’re surprisingly hard to find on restaurant menus today.

Living in Bangalore has made me appreciate these little moments even more.

A fisherman passing by, a conversation by the river, a quick fish price negotiation, and fresh pulimunchi by lunch.

Some of my favourite childhood memories were built around days like these. ❤️

Everyone has that vessel; a pressure cooker, a tiffin box, a plate that belonged to someone they loved.

This brass plate was my grandfather’s. We chose to keep it as his memory. And every time I travel home, I choose to eat from it. Every time I eat off it, it feels like he’s still at the lunch table. Today’s meal , mussel sukka, fish fry, boiled rice, tomato saar. Udupi rain outside. Nothing missing.

Some meals feed something deeper than hunger.”
