Your next favourite toast has arrived — creamy, tangy, spicy, and packed with veggies!
Here’s how to make Pomodoro Toast with Vegan Ricotta 🍅🍞🌱

Ingredients for the ricotta:

1 block firm tofu

½ onion finely chopped

½ tsp garlic minced

2–3 tbsp plant-based milk

Juice of 1 lime

Salt and pepper to taste

1 tbsp olive oil (extra virgin)

👉 Blend everything together into a fine paste.

Ingredients for the pomodoro vegetables:

2 cups steamed mixed veggies (broccoli, babycorn, mushroom)

¼ cup chopped bell peppers

¼ cup sliced zucchini

2 cups tomato puree

1 tsp garlic minced

Few basil leaves torn

1 tsp chilli flakes

1 tsp oregano

Salt and pepper to taste

2 tbsp olive oil

👉 In a pan, heat the oil and add the garlic. Cook until light brown and then add the bell peppers. Sauté until tender.
👉 Add the zucchini and tomato puree and cook for 5 min.
👉 Add the seasonings and the rest of the veggies. Cook for a few more minutes.
👉 Add the torn basil and turn off the heat.

To assemble:
Toast sourdough until brown.
Spread a thick layer of the tofu ricotta.
Top with a heaping spoon of pomodoro veggies.
Finish with a dash of balsamic vinegar. Serve warm!

Ingredients for the salsa -

2 ripe mangoes chopped
1 avocado chopped
1 onion chopped
2 tomatoes chopped

Salt and cumin powder to taste

Seoulful Sourdough Toast

Spicy crunch, sweet bliss 🍞🌶️! Kimchi sourdough toast topped with crispy apple, melted cheese, and a drizzle of honey - the ultimate flavor fusion 🤯

Ingredients -
- Take a toasted sourdough slice
- Top it up with kimchi
- Sprinkle mozzarella cheese
- Place thinly sliced apples to cover the goodness
- Add a dash of honey to add the sweetness to the spice

This one is a crazy combination but a flavour bomb in every bite!

Grilled Pineapple and Barley Salad

Sweet meets heat! 🍍🌾 Grilled pineapple and nutty barley come together in perfect harmony, tossed in a spicy-sweet honey chilli dressing 🔥💛. Refreshing, healthy, and utterly delicious for a complete lunch goal! 😋

Ingredients for the dressing -
1/4 cup extra virgin olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp chilli flakes
2-3 cloves minced garlic
Salt and pepper to taste

Whisk everything together

Ingredients for the salad -
2 cups mixed lettuce
1/4 cup chopped coriander, mint and parsley
1/4 cup cooked barley
1/2 cup diced pineapple grilled in a pan
1/4 cup diced cherry tomatoes, bell pepper, cucumber
Some roasted cashews

Lay the salad leaves on a plate. Toss the dressing with all the other ingredients. Place a heaping spoonful on the bed of lettuce. Enjoy!

Mediterranean Chickpea Salad

Tangy twist on a classic 🌿! Fresh lettuce, protein-packed chickpeas, and fragrant parsley, all tied together with a sweet & tangy pomegranate vinaigrette 💦🌸. Salad goals achieved! 😋

Ingredients for the dressing -
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp pomegranate reduction (recipe shared in the caption)
1/2 tsp mustard powder or sauce
1/2 tsp minced garlic
Few sprigs of mint leaves
Salt and pepper to taste

Whisk everything well.

Ingredients for the salad -
1 cup mixed lettuce
1/4 cup parsley
1 cup cooked chickpeas
1 cucumber sliced
1/2 cup cherry tomatoes halved
Feta cheese
Mixed seeds/olives for garnish

Toss all the ingredients of the salad except for the leaves, with the dressing. Lay the leaves on a plate. Stack the salad on top and garnish with the cheese and seeds.

Ice Apple, Mango and Coconut Salad

Summer's sweetest trio! 🥭🌴❄️ Ice apple, mango, and coconut come together in a refreshing seasonal salad that's perfect for hot days. Try it now and beat the heat!

Ingredients for the dressing -
2 tbsp olive oil
Juice of 1/2 lime
2 tbsp coconut water
1 tsp honey
Few mint leaves
Salt and pepper to taste

Whisk everything together

Ingredients for the salad -
1 cup mixed lettuce leaves torn
1/4 cup sliced ice apples
1/4 cup diced mango
2 tbsp sliced coconut malai
2 tbsp sliced cucumber
Few cranberries and mixed seeds for garnish

Lay the leaves on a plate or bowl. Mix all the fruits together gently so as to not mash anything. Toss the dressing with the salad, and lay some on the leaves. Top with the dried berries and seeds. Serve immediately.

Quick & Easy Miso Ramen

Ramen in a flash! 😋 Quick, easy, and slurp-worthy, my 10-minute miso ramen recipe is a game-changer! 🍜👌 Scroll down for the deets and get cozy with a bowl of goodness!

Serves 4 bowls
Ingredients for the paste -
1 tbsp shiro miso paste
1 tbsp gochujang paste
1 tbsp peanut butter
1 tsp ginger garlic paste
2 tbsp light soy sauce
Whisk all these ingredients together. You can store this in the fridge for 2-3 days.

Ingredients for the broth -
1 tbsp sesame oil
2 cups oat/soy milk
2 cups vegetable stock
1 cup mixed sauteed veggies ( I used bokchoy, mushrooms, corn, edamame, marinated tofu)
Salt to taste
1/2 cup shirataki/udon/ramen noodles

Method -
In a pan, heat the oil. Add the paste and cook for a min. Now add the milk and stock and whisk well. Once it's lump-free, add all the veggies and noodles and check taste for soy or spice. If you want to make it more spicy, you can serve with chilli oil. Serve hot.

Mangoes: A Nostalgic Bite of Summer

For many, the word "mango" conjures up instant nostalgia. It's the undisputed king of fruits, the hero of childhood summers, and a flavor that evokes memories of simpler times.
Remember fighting with siblings over the juiciest mango, the last bite, even the seed, just to suck it dry? Or being banished outside by your grandmother with a mango carefully sliced at the top, to avoid sticky floors? Those were the days of messy hands, happy mouths, and content tummies, all thanks to the sweet, tangy goodness of mangoes.
Whether sweet or sour, mangoes were a daily treat. From mango sandwiches to aamras, sliced pieces sprinkled with chili powder, or simply sucking the fruit straight from the peel, there was no wrong way to enjoy a mango.
Today, the love for mango continues, it has just evolved into including them in creative and healthy dishes for my kids. From zesty mango salsa to delicate mango crepes, fragrant mango Thai curry to classic Thai mango with sticky rice, the possibilities are endless – and being a recipe curator, I have made them all!
But sometimes, the best way to enjoy a mango is to revisit those childhood memories. That's why I'm sharing an easy recipe that encapsulates my favourite mango memory in a delightful French dessert. The combination of sweet, sour, and spicy flavors, paired with an icy texture, will transport you back to those hot summer days, with mangoes fresh from the fridge and a sprinkle of chili powder on the side.

South Indian Themed Cheese Ball with Baked Nippat Crackers

Created this recipe for a South Indian themed get together.
Instead of the regular malagapodi, i used the traditional Mangalore ghee roast masala as the spice component of this cheese. Sauteed the masala with caramelised onions and finished it with crunchy and crumbled curry leaves.
This was paired with baked nippat crackers, you will find the recipe for this in the feed.
