A wholesome, no-maida pasta alternative that’s light, creamy, and protein-rich πŸ’š

πŸ“ Ingredients:

β€’ 2 medium zucchinis (julienned into zoodles)
β€’ 1/2 cup cooked cowpeas (lobia)
β€’ 1/2 cup mixed veggies (bell peppers, tomatoes, onions)
β€’ 1/4 cup cashews (soaked 30 mins or overnight)
β€’ 5–6 garlic cloves
β€’ Salt & pepper to taste
β€’ Herbs of your choice
β€’ 1–2 tbsp olive oil or butter
β€’ A dash of milk or cream

1. Roast the mixed veggies (OTG or stovetop) until slightly charred.
2. Blend them into a smooth puree along with soaked cashews to make a creamy sauce base.
3. Heat butter or olive oil in a pan. Add chopped garlic and sautΓ© until fragrant.
4. Pour in the sauce and cook for 1 minute.
5. Add julienned zucchini and cooked cowpeas. Toss and cook for about 4–5 minutes until just tender.

Healthy Jowar Upma Recipe | Vrat Friendly & Weight Loss Breakfast

Soak Β½ cup jowar overnight. Pressure cook for 8–9 whistles until soft.
For tadka, heat ghee, add cumin, mustard seeds, curry leaves, green chilli, and onions (skip for vrat). Add boiled potato cubes, cooked jowar, and mix well. Garnish with grated coconut, roasted peanuts, and coriander. Serve hot!

Dal Makhni Without Cream | Healthy, Protein-Packed & Restaurant Style ✨

πŸ₯˜ Ingredients
β€’ 1 cup whole black urad dal (soaked overnight)
β€’ 2 tbsp rajma (soaked overnight)
β€’ 2 tbsp ghee
β€’ 1 tsp cumin seeds
β€’ 1 tbsp ginger-garlic paste
β€’ 2 medium tomatoes (pureed)
β€’ 1–2 green chilies (optional)
β€’ 1 tsp red chili powder
β€’ Β½ tsp turmeric powder
β€’ 1 tsp coriander powder
β€’ 1 tsp garam masala
β€’ 1 tsp roasted kasuri methi
β€’ Salt to taste
β€’ 1 tbsp butter
β€’ ΒΌ cup milk (for richness)

1. Soak & Cook: Soak urad dal and rajma overnight. Pressure cook with salt and water. After the first whistle, simmer on low flame for 30 minutes until soft and creamy.
2. Make the Masala: In a pan, heat ghee. Add cumin seeds, then ginger-garlic paste, and sautΓ© well. Add spices and tomato puree. Cook until the masala releases oil.
3. Combine & Simmer: Add the cooked dal into the masala. Simmer on low for at least 15 minutes β€” the longer you simmer, the deeper the flavors.
4. Finish: Stir in butter, roasted kasuri methi, garam masala, and milk for richness.
