You might take an Odia to any place in this world, but a piece of Odisha always resides in his heart.
Puffed rice or Mudhi which is an integral part of Odia cuisine is also famous all over India as "bhel". However, there's a significant difference between Mumbai's bhel and Odisha's mudhi. When the bhel absorbs all the chutneys and ultimately turns out to be soggy, the authentic Odisha mudhi remains crisp even after mixed with various other gravy like ingredients.
Mudhi, which goes with almost every Odia dish, is an irreplaceable part of Odisha's cuisine. This savoury, also known as "Jhal Mudhi" or "Masala Mudhi" gets its name from the spicy ingredients that it comprises of.
The mudhi is mixed with a good quantity of pickle oil or masala to give it the tangy taste. Into it goes chopped onions, green chillies, tomatoes, cucumber, coriander leaves and sprouts. To balance the taste, a pinch of salt is added and topped with mixture or chanachur.
Consider it a snack or a meal, mudhi provides equal justice to both!!!
